Fired Up Rosemary Salmon





Ingredients


1 fillet salmon, skin-on, between 5 to 7-pounds


1 tablespoon butter


Salt and freshly ground black pepper


2 to 3 bunches fresh rosemary sprigs, plus more, for garnish


Lemon or orange slices


Directions


Preheat oven to 350 degrees F.





Using small fish tweezers remove pin bones from the length of the salmon and discard.





Place salmon skin side down on tin foil in a large roasting pan and season with a tablespoon of butter, salt and pepper. Place the sprigs of rosemary and lemon slices over the salmon so that they are overlapping and form a tent over the salmon. Wrap each salmon in the tin foil and roast for 15 minutes or until internal temperature reaches 145 degrees F on an instant-read thermometer.





Remove the salmon from the oven and bring to a well ventilated outdoor area. Light the oven dried rosemary on fire over the salmon. Let the ash fall over the salmon leaving streaks of concentrated rosemary flavor.





Using a large fish spatula, remove the side of salmon from the roasting pan and place on a platter. Garnish with sprigs of fresh rosemary and lemon wedges.What is your best salmon recipes?
Potato Salmon Patties





* 1 (14.75 ounce) can salmon, drained and flaked


* 2 eggs, beaten


* 1/4 cup garlic and herb seasoned dry bread crumbs


* 1/4 cup dry potato flakes


* 1 medium onion, minced


* 1 clove garlic, minced


* 1/4 teaspoon dried dill weed


* 1/4 teaspoon celery salt


* salt and pepper to taste


* 2 tablespoons olive oil


1. In a medium bowl, mix salmon, eggs, garlic and herb seasoned dry bread crumbs, dry potato flakes, onion, garlic, dill weed, celery salt, salt, and pepper. Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.


2. Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned.What is your best salmon recipes?
Salmon in Vodka Cream Sauce





8 tablespoons butter


1 onion, thinly sliced


1 pound spinach


6 6 ounce salmon fliets


salt and freshly ground pepper


3 tablespoons olive oil


1 1/2 cups whipping cream


1/2 cup vodka


2 tablespoons green peppercorns in water, drained and crushed


3 tablespoons fresh lime juice


1/4 cup snipped fresh chives





Preheat oven to 350F. Combine 4 tablespoons butter and onion in large Dutch oven. Cover and bake until onion is golden brown, stirring occasionally, about 45 minutes.





Stir spinach into onion and bake until just wilted, about 3 minutes. Remove from oven; keep warm.





Season salmon with salt and pepper. Heat oil in heavy large skillet over high heat. Add salmon in batches and cook about 3 minutes per side for medium. Transfer to platter. Tent with foil to keep warm. Pour off excess oil from skillet.





Add cream and vodka and boil until slightly thickened, about 4 minutes. Add green peppercorns and remaining 4 tablespoons butter and stir until butter is just melted. Mix in lime juice, season with salt and pepper.





Divide spinach and onion mixture among plates. Top each with salmon fillet. Spoon sauce over. Sprinkle with snipped fresh chives

Hollandaise sauce





Ingredients





1/2 tsp salt .


2 tsps lemon juice .


fresh ground pepper .


1 tbsp sliced dill or parsley .


1 c plain yogurt .


1/2 tsp Dijon mustard .


3 egg yolks





Directions





Step #1 Beat eggs, yogurt, lemon juice in double boiler.


Step #2 cook for about 15 min or until thickened.


Step #3 Note: Sauce will become thinner after 1o min of cooking, then will thicken again.


Step #4 Remove from heat %26amp; stir in the dill, salt, pepper %26amp; mustard.


Step #5 Serve warm.


Step #6 Can be put in the fridged for up to 1 week.


Step #7 Reheat over hot not boiling water.
Salmon covered in wing sauce, then grilled. The wing sauce should be made from 50% butter, 50% Louisiana Hot Sauce, or just your favorite. Nothing too hot, or the spiciness will detract from the flavor. Other things to throw in are Mustard powder, pepper, and Onion salt.
Salmon Croquettes





1 can salmon (Pink Beauty)


1 c cracker crumbs


1 egg





Get all the gristle and bones out of it. The mix all ingredients with your hands and make into patties and fry in hot oil. Brown on each side.
the best way to prepare salmon is either on a cedar plank on an open fire or slowly baked while wrappped in foil with some miracle whip on it. I grew up eating salmon and hands down those are the best ways to serve it. If it isn't fresh, steam it. Just make sure your plank .is not treated. Most specialty kitchen stores sell them. Oh yeah, so does costco
I like to baste my salmon in fresh lemon juice and bake under the broiler on the low setting for about 5 minutes on each side. I also remove the skin before baking. Then I serve it with my homemade tartar sauce. Very simple but delicious.
Lightly salted and pan fry until the skin is crispy, and have some 1,000 Island Dressing on the side of the plate.
mayo spread over all of it chopped dried onions and johnny's seasoning and bake, very good.
Marinate in soy sauce, brown sugar and ginger. Then fry or bbq, very good.
