What is a good baked salmon recipe?

Baked Salmon





2 cloves garlic, minced


6 tablespoons light olive oil


1 teaspoon dried basil


1 teaspoon salt


1 teaspoon ground black pepper


1 tablespoon lemon juice


1 tablespoon fresh parsley, chopped


2 (6 ounce) salmon fillets





In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.


Place salmon fillets in a medium glass baking dish, and cover with the marinade.


Marinate in the refrigerator about 1 hour, turning occasionally.


Preheat oven to 375 degrees F (190 degrees C).


Place fillets in aluminum foil, cover with marinade, and seal.


Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.





Zesty Baked Salmon Steaks





INGREDIENTS:


4 to 6 salmon steaks


1 envelope Italian salad dressing mix


1/2 cup water


2 tablespoons lemon juice


6 to 8 ounces fresh sliced mushrooms, saut茅ed in 2 to 3 tablespoons butter


1/4 cup grated Parmesan cheese


PREPARATION:


Arrange salmon steaks in a buttered 13 x 9 x 2-inch baking dish. Combine salad dressing mix, lemon juice, and water; pour over salmon. Cover dish with aluminum foil. Bake at 350掳 for 20 minutes. Top salmon with saut茅ed mushrooms and sprinkle with Parmesan cheese.





Continue baking uncovered for another 10 minutes.


Serves 4 to 6





Baked Salmon Croquettes Recipe





Ingredients:


***SALMON***


1 can salmon, drained


1 onion, diced


2 eggs


2 tablespoons mayonnaise


1 tablespoon chopped parsley


2 medium potatoes, cooked and mashed


1 tablespoon water


2 cups dried breadcrumbs


1 tablespoon grated Parmesan cheese


***QUICK TOMATO SAUCE***


4 tablespoons tomato sauce


1 onion, diced


1/2 chicken stock cube


1 tablespoon water








Remove the bones from the salmon and flake into a bowl. Mix in onion, 1 egg, beaten, mayonnaise, parsley and the mashed potatoes. Take spoonfuls and mould into croquette shapes (oval). Refrigerate for 1 hour. Mix the other egg with water and, in another bowl mix the breadcrumbs with the cheese.





Dip croquettes into the egg and water mix then toss into breadcrumb mixture. Refrigerate a further hour. Arrange croquettes in a greased baking dish and bake at 375 F for 15 - 20 minutes.





Mix the sauce ingredients together in a pan and bring to the boil. Stir well and pour into a sauce boat.





Baked Salmon





1 lb salmon fillets


2 tablespoons mayonnaise


1 teaspoon lawry's lemon pepper


1 tablespoon parmesan cheese


1 cup dry breadcrumbs





Preheat oven to 350掳F.


Fillet salmon and place skin side down on a glass baking dish.


Spread a generous amount of mayonnaise; cover entire top of fish.


Sprinkle liberally with seasoned salt, cheese and dry bread crumbs.


Bake about 25 to 30 minutes, uncovered.


Place under broiler until top turns brown.

If you want really good salmon, use a cast iron skillet and cook the salmon, skin side down untill its dark on one side turn it over,remove skin, add a little pepper, cook it untill is almost black turn and do the same, serve with a little salad, lemon and avacado..its called blackened salmon, don't put all that stuff on it.. you'll lose the real taste..

Baked in Foil Salmon Recipe:





4 (5 ounces each) salmon fillets


2 teaspoons olive oil plus 2 tablespoons


Salt and freshly ground black pepper


3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained


2 chopped shallots


2 tablespoons fresh lemon juice


1 teaspoon dried oregano


1 teaspoon dried thyme





Preheat the oven to 400 degrees F.





Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend.





Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely; seal the packets closed. Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.

I like lemon juice, butter, salt %26amp; pepper, and thinly sliced onions and lemon on my baked salmon. Bake at about 350-400 until tender and flaky.
1 Tbs. rosemary, crumbled, or 2 Tbs. fresh minced

鈥?1-1/2 lbs. salmon steaks


鈥?1 Tbs. plus 1 tsp. olive oil





Preheat oven to 425 degrees F. Combine rosemary, garlic and salt and pepper to taste in a mortar or bowl and mash to a paste. Using a fork or food processor, mix paste into breadcrumbs. Season both sides of salmon steaks with salt to taste. Arrange salmon steaks in a lightly oiled baking dish. Press equal amounts of breadcrumb mixture onto the top of each salmon steak and drizzle with oil. Place in oven and roast 10-12 minutes or until fish is cooked throughout.

1st. Your favorite Italian dressing. Let marinade. Bake. Use lemon after.





2nd. olive oil on the salmon.... sprinkle dry italian spicy or fine chopped basil %26amp; garlic(use sparingly)...... thinly sliced tomato (use your favorite type of tomato) lay on top of salmon.....and sprinkle pepper if needed. Use lemon after.





Note:garlic is strong and you don't want to overpower the taste of your fish. Keep it simple. Grab your favorite white/red wine and enjoi..
