Need salmon recipes please!?

Well I hate the taste of salmon but I somehow (Long story) got a hold of a couple pounds of coho salmon and I need a recipe.

BAKED WHOLE FISH

3/4 lb Salmon, whole -- or trout


2 tb Butter -- or margarine


2 c Asst vegetables -- sliced


4 sl Bacon





Cover broiler pan rack with foil. Place bed of


assorted sliced vegetables on foil. Lay fish on


vegetables and put bacon slices on fish. Bake at 425F


for 20-30 minutes or until flesh flakes easily with


fork. Transport fish and vegetables to platter

BARBECUED SALMON WITH BASIL

4 Salmon steaks (6 to 8 ounces


-each) thawed if necessary.


2 tb Lemon juice


2 tb Olive oil


1 t Dried and crushed basil


Lemon wedges





Combine lemon juice, olive oil and basil; brush on


both sides of salmon. Grill over medium hot coals 10


minutes per inch of thickness or until fish flakes


when tested with a fork. Serve with lemon wedges.

SALMON VEGETABLE LOAF

1 c Salmon


2 c Mashed potatoes, hot


3/4 c Beans, cooked


1/2 c Onion -- diced


Salt and pepper


2 Egg whites


2 tb Butter -- melted





Flake salmon. Remove bones. Combine salmon,


potatoes, beans, onions, and melted butter. Season to


taste. Mix until well blended. Fold in stiffly


beaten egg whites. Pour into well-oiled baking dish.


Bake in moderate oven (400 F) until puffy and brown.


Serve at once with sour pickles and tartare or tomato


sauce.

SAUTEED SALMON STEAKS.

1/4 c Apple cider


2 tb Prepared mustard


4 Fish steaks





Melt butter in a skillet. Spread surface of fish


steaks with mustard. Add cider to butter and sautee


steaks ten minutes on a side in this mixture. Also


for: Any large fish steak will work. Suggestions:


SUBST beer for Apple Cider.

TERIYAKI SALMON STEAKS

1 c Teriyaki sauce


1 tb Peanut oil


3 tb Parsley [chopped]


1 Clove garlic [crushed]


1/2 ts Pepper [freshly ground]

1) Mix the first 5 ingredients in a bowl... then


add the salmon steaks and let sand for 1 to 2 hours,


turning the steaks every 20 to 30 min... 2) Place the


steaks on a sheet of heavy foil... Grill for 4 to 5


min. basting with the sauce... Turn the steaks and


grill for 3 min. or until the steaks flake easily,


basting with the sauce... 3) Serve hot or cold...

SUCCULENT SALMON

10 oz Salmon fillet


(remove the skin)


2 md Red potatoes


1 lg Onions, sliced 1/4 inch


8 Baby carrots or 8 carrot


Sections, cut into 2″


Pieces


1/4 c Fresh orange juice


Broccoli, cut into florets


1 tb Olive oil


1/4 ts Thyme


1/2 ts Basil


1 pk Herb-ox low salt


Chicken stock mix


Salt, pepper,to taste





This is a new adaptation from a series of fish recipes


was developed for “people who don't like fish”. The


stock and juice combined with the onion add a


distinctive savory flavor. The combination makes it


hard to distinguish the individual flavors. This


dinner takes less than ten minutes to complete.





Cut the potatoes into one quarter inch slices and


place into a pan of cold water. Turn pot on high until


it starts to boil. Add the carrots after three


minutes. Salt the water and reduce heat to medium.


Cook until tender, about six to seven minutes. Add


broccoli about 2 minutes before the potatoes are


finished. Drain if finished before the fish, and place


back in hot pan. Add fresh pepper.





Saute onions in one half the oil, med-low heat in a


ten inch teflon pan. When they start to brown add the


rest of oil. Place the fish fillet on top fat side


down and turn up heat to med- high. Saute until salmon


turns white on bottom. Add herbs and pepper. Add one


quarter cup of water, chicken stock and the orange


juice. Lower heat and simmer about five minutes. Baste


occasionally. The salmon should be pink inside and not


over done.





Cut the filet in half in the pan. Using a plastic


spatula, pick up the fish and onions and place in one


half of plate. Add a spoon or two of sauce. Add vegetables and arrange in semi-circle.

Baking or Grilling them with bbq sauce is always delicious...





Otherwise, Mrs. Dash's seasoning makes some good ones, look in that aisle!





You can always bake/grill too and chop the salmon up and put it in a salad w/ your choice of dressing..
