Salmon recipes?

Any healthy salmon recipes? Easy to make and healthy please. Thanks...Salmon recipes?
Wrap individual fillets in foil with a seasoning of dill, a squeeze of lemon juice, a lemon slice, and maybe a dot of butter and/or some capers. Bake in the oven at 400-425 until cooked through.

Marinate in balsamic vinegar and grill, topped with a pat of sundried tomato butter (finely chop tomatos, mix with butter, and keep in fridge to re-harden).

Top salmon fillets with a pesto crust--equal parts pesto, breadcrumbs, and parmesan cheese--and bake.

Salmon with Leeks:

Prepare 2-3 leeks (white %26amp; pale green parts only), washing them well and slicing into thin strips. Sautee in 1 tbsp butter (or broth, if you want something a little healthier!) for about 5 minutes. Add a clove of crushed garlic, some lemon juice, and maybe 1/2 cup chicken or vegetable broth (you can make your own leek broth with the green parts of the leeks). Bring to a simmer, and place salmon on top of leeks. Sprinkle with salt %26amp; pepper, and another squeeze of lemon juice. Cover and simmer until salmon is cooked, about 3-4 minutes.

This isn't really a recipe but oh well, it made me lose weight...

I grilled a salmon steak and served it with cooked sugar snap peas, courgette and butter beans. If you do not like one of those vegetables, you could swap for a medium baked potato with a little butter.

Yummy yummy.
Here's a link to a recipe at allrecipes.com that's really good. The recipe says to bake the salmon but I've been cooking it on the grill this summer. It only takes a few minutes on each side. I spray a sheet of aluminum foil with cooking spray and then put the salmon on that so it doesn't stick to the grill rack.

SALMON FILET WITH MANGO CILANTRO SALSA

The following is an excerpt from the book ';Eat Right for Your Metabolism'; by Felicia Drury Kliment.

Salmon Filet with Mango Cilantro Salsa:

4 6-ounce portions salmon filet

Mango Cilantro Salsa:

1 ripe mango, peeled and 陆-inch diced

录 cup chopped scallion, green part only

录 cup diced red bell pepper

1 tablespoon finely diced fresh jalapeno

1 tablespoon chopped fresh cilantro

1 small clove garlic, minced

1 tablespoon freshly squeezed lime juice

录 teaspoon salt

陆 teaspoon extra-virgin olive oil

Bake salmon filet at 400潞F for 15 to 20 minutes, depending on the thickness of the salmon. For Mango Cilantro Salsa, lightly toss all ingredients in bowl. Chill in refrigerator for at least 1 hour for flavors to meld. Serve salsa as an accompaniment to salmon. Mango Cilantro Salsa also goes nicely with grilled meat or chicken.
