Any good salmon recipes?

My father in law recently went to Alaska on a fishing trip and brought back some Alaskan king salmon. He cleaned and deboned them and froze them and gave me 9 or 10 fillets. Problem is I have no idea how to cook them. I have a barbecue and and I can do it in the oven but I would love it if I could gather different recipes from people on how they like to cook it. I'm not into fancy stuff. I just want some easy to make great tasting salmon. Any help is greatly appreciated..Any good salmon recipes?
Fresh salmon is so flavorful that you don't really need to add too much to it. Just salt and pepper, like you would to a fine steak. Pan frying or grill will give you some nice caramelized surface.





If you get the fatty part, lots of whites, you might want to pair it with spinach. Easiest way is to buy frozen chopped spinach and microwave it. Drain the juice, serve the cooked salmon on it. The oil is just wonderful with spinach.





For children, you can give them miracle whip for dipping. The slight sourness works well with the oil of salmon.





The biggest problem with salmon is that they are often overcooked. You want them to be rare or medium rare. It gets too dry when they are fully cooked. (They started to taste like canned fish.) Since you have them frozen, some 95% of bacteria is dead. So there is no need to fully cook it.Any good salmon recipes?
I make salmon two ways.





My favorite is to sprinkle it with lemon pepper seasoning and dried basil, then I grill it either on my indoor grill or on foil on my outdoor grill. SO GOOD!





Another way is to glaze it and bake it:


1/4 cup pure maple syrup


1 tablespoon lemon juice


2 tablespoons soy sauce


1 teaspoon Dijon or stone-ground mustard


1/2 teaspoon finely chopped gingerroot, if desired


4 1/4-pound salmon fillets


2 tablespoons thinly sliced scallions or green onions





Mix all ingredients except salmon and scallions.





Cut salmon fillet into 4 serving pieces. Place fish in shallow glass or plastic dish. Drizzle marinade over fish reserving about 1/4-cup marinade to serve over cooked fish. Refrigerate about 30 minutes.





Heat oven to 400掳. Remove fish from marinade; set aside marinade. Place fish in baking dish. Bake 15 to 20 minutes, basting occasionally with marinade, until fish flakes easily with fork.





To serve, drizzle reserved 1/4-cup marinade over fish; top with scallions.
Salmon on a bed of onions,simple and delicious.


In Your ovenproof pan make a bed of sliced onions and a few cloves garlic,season with salt and pepper.


Season your fish with the same seasonings and drizzle with olive oil,lemon juice and add capers.


Bake in a preheated oven for 20 -25 min. and get ready to enjoy something very delicious.

Awesome Cedar Plank Salmon





2lb Filet of Wild Caught Salmon


1 陆 cups packed brown sugar


6 tablespoons melted butter


6 tablespoons lemon (or lime) juice


4 teaspoons of dill weed


录 to 陆 teaspoon of cayenne pepper


Lemon Pepper





鈥?Soak a Cedar Plank in water four hours to overnight. You can find them in the grill section of Home Depot, Menards or better hardware stores. If you can't find a Cedar Plank, then smoking chips (Mesquite is best for this recipe) will work just fine. Just soak them for a minimum of 20 minutes to four hours, place in tin foil, and put directly onto the coals. Wait til they smoke and start cooking the Salmon.


鈥?Combine butter, brown sugar, citrus juice, dill weed and cayenne in a saucepan 鈥?heat until heated thru and it starts to bubble. Set aside and reserve a cup or so for basting.


鈥?Preheat the grill on medium high heat for 10 minutes.


鈥?Place the wet cedar plank on the middle of the grill and close lid. Wait approximately ten minutes for it to start to smoke pretty heavily. Have a squirt bottle of water handy as the edges of the plank sometimes catch fire. But, do wait until the plank is good and smoky to get the best flavor


鈥?Spray (or brush) the Salmon Filet, skin side down with Olive Oil and sprinkle lightly with Lemon Pepper


鈥?When the Cedar Plank is smoking, place the Filet, skin side down, in the center of the plank and shut the lid. There is no need to turn the fish while it鈥檚 cooking


鈥?Baste liberally with the brown sugar sauce throughout cooking (because it's on a plank)


鈥?Salmon is done when there is still a thin pink ribbon in the center of the filet 鈥?if you wait for the fish to flake apart like a whitefish, it is overdone.


鈥?When you bring the fish in, it will continue to cook for approximately five minutes, so re-heat the remaining sauce in the saucepan and drizzle over the salmon filets


鈥?Serves 4 鈥?6





Wine suggestions:


Red: Castle Rock Pinot Noir (Or Cristom Pinot Noir if you want to splurge!)


White: Kim Crawford Sauvignon Blanc, Bogle Chardonnay or Bonterra Sauv Blanc

Put your salmon on the grill. You can wrap them in foil but first put butter, lemon pepper and garlic on it. Be sure to watch how long you leave it on but 45 min. should be good. Dont flip or the butter will run out taking the spices with it.
i would never ruin tose fresh salmon from Alaska with a recipe i would just grill,saute ,fry or bake them
