Spicy Breaded Salmon Fillets

Ingredients

4 salmon fillets, about 6 oz each

1/2 cup flour or fine cornmeal (use cornmeal for gluten-free)

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon dried oregano, finely crumbled

1 teaspoon salt

1/2 teaspoon black pepper

1/8 teaspoon cayenne pepper (or to taste)

2 tablespoons butter, oil or a mixture of both

Preparation:

Mix cornmeal or flour, paprika, salt, pepper, garlic powder and oregano on a plate. Reserve half the seasoning mixture; pat the other half on to one side of each fillet.

Heat oil or butter in skillet large enough to hold fillets in a single layer. When hot, put fillets, seasoned side down, into pan. Pat remaining seasoning onto topside of each fillet. Allowing 8 minutes for each inch of thickness, carefully turn fillets when half cooked.

Remove when done (when fish is easily flaked with a fork) and serve hot.

Mrs Dash has Chipotle Southwestern spice...it has a red top. It's very spicy and good on Salmon. Pan sear salmon rubbed w/ Mrs. Dash in canola oil over med/high heat until crusted brown. (@ 2 min) Flip once. Cook other side the same until golden crust. Reduce heat to medium/low and cover. Continue cooking 7-8 minutes until salmon flakes with a fork.

Serve with a drizzle of fresh squeezed lemon juice.

Get some Tony Chachare seasoning in the green container. Sprinkle it on your fish. Put in a hot frying pan and cover til fish flakes easily with a fork. Serve with rice. It is very delicious and very easy.

I just buy blackening seasoning in the store and apply it liberally to my fish. I also add some cayenne pepper to make it even spicier. It's very simple and delicious!!
