Looking for recipes for shrimp or salmon and a bottle of white wine?

I like to take my salmon season it with what I am in the mood for, put in some foil, toss a lemon slice and about 6 shrimp on top, throw some seasoning on top of the shrimp, a dab of butter on top seal it up, put in oven at 450 for 20 mins and wal- la dinner and no mess.

Get a handful of peeled and deveined prawns (shrimp) and cook quickly in a skillet over high heat and with a little oil.

Remove the prawns and toss into the pan some garlic and white wine and deglaze the pan. Allow the white wine to reduce in volume by simmering.

Pour in some fresh cream and reduce again until the sauce has thickened up to the consistency of a mayonnaise.

Reduce the heat and toss the prawns back in and a little fresh coriander (cilantro).

This can be used for mussels, scallops, oysters, white fish, salmon basically any seafood.

You can also fill scallop shells with the mixture, toss a little grated cheese and breadcrumbs over the top, place under a grill until the top is golden. This also works well as a filling for hors d'oevres or any place you need to do an entree - just serve the finished product in a lettuce cup.Looking for recipes for shrimp or salmon and a bottle of white wine?
