What is a good salmon recipe, without grilling?

I usually grill my salmon but I was think of cooking it indoors this weekend. What would be the best way of going about this and how to season my fish?What is a good salmon recipe, without grilling?

Salmon Macaroni Bake --








INGREDIENTS


1 (14 ounce) package deluxe macaroni and cheese dinner mix


1 (10.75 ounce) can condensed cream of mushroom soup, undiluted


1/2 cup milk


1 (6 ounce) can skinless boneless salmon, drained


1 tablespoon grated onion


1/2 cup shredded Cheddar cheese


1/2 cup dry bread crumbs


2 tablespoons butter or margarine, cubed











DIRECTIONS


Prepare macaroni and cheese according to package directions. Stir in the soup, milk, salmon, onion and cheddar cheese. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with bread crumbs; dot with butter. Bake, uncovered, at 375 degrees F for 30 minutes or until heated through.

Smoked Salmon Pizzas --








INGREDIENTS


6 (6 inch) pita breads


1/4 cup pizza sauce


1/4 pound smoked salmon, chopped


1 small red onion, halved and thinly sliced


1 cup shredded mozzarella cheese


1/4 teaspoon dried oregano











DIRECTIONS


Place pitas on an ungreased baking sheet. Top with pizza sauce, salmon, onion, cheese and oregano. Bake at 425 degrees F for 7-10 minutes or until cheese is melted.

Baked Dijon Salmon --








INGREDIENTS


1/4 cup butter, melted


3 tablespoons Dijon mustard


1 1/2 tablespoons honey


1/4 cup dry bread crumbs


1/4 cup finely chopped pecans


4 teaspoons chopped fresh parsley


4 (4 ounce) fillets salmon


salt and pepper to taste


1 lemon, for garnish











DIRECTIONS


Preheat oven to 400 degrees F (200 degrees C).


In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.


Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.


Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.

Poached Salmon





1/2 cup dry white wine


1/2 cup water


2 pounds salmon fillets, cut into 4 pieces


2 tablespoons butter, softened


1 1/2 teaspoons dried parsley


1 1/2 teaspoons chopped garlic


salt and pepper to taste





DIRECTIONS


Heat wine and water over medium high heat in a large non-stick skillet for 5 minutes.


Slide salmon pieces into poaching liquid and dot with butter. Sprinkle with dried parsley, garlic, salt and pepper.


Bring to a slow boil, reduce heat to medium and poach until salmon flesh is firm, about 10 to 15 minutes.



BAKED SALMON AND DRESSING





1 tbsp. butter


1 sm. onion, finely chopped


3 c. zucchini, shredded


1 c. carrot, shredded


1/4 c. parsley, minced


1-2 tbsp. fresh basil or tarragon, minced or 1/2-1 tsp. dried basil or tarragon


4 salmon steaks (4 oz. each)


1 tsp. fresh lime juice


Salt %26amp; pepper to taste





Preheat oven to 350 degrees. In a skillet over medium heat melt butter. Add onion. Saute until tender. Add zucchini, carrot, parsley and basil; mix lightly.





Lightly grease a 10 x 10 inch baking dish. Place vegetable mixture in prepared dish. Coat salmon steaks with lime juice. Arrange over vegetable mixture; sprinkle with salt and pepper. Cover. Bake for 30 minutes. Uncover. Bake for 10 minutes longer or until fish flakes easily.





Makes 4 servings.

BAKED SALMON WITH CREAM %26amp; CUCUMBER





1 (5 lb.) salmon


3 heaping tbsp. butter


1 med. cucumber


Salt %26amp; pepper


1/2 pt. (1 c.) cream


Juice of 1 lemon


2 sprigs of parsley





Put the parsley in the cleaned gullet of the fish and rub butter over the outside.





Put in a baking dish, season well and pour the cream around.





Cover with foil and bake in a moderate oven (350 degrees) for 10 minutes to the pound.





Remove from the oven and add the peeled and cubed cucumber and lemon juice. Baste well and put back in oven, uncovered, for 15 more minutes.





Skin the fish before serving and pour over the sauce. The cucumber should still be a little crisp to act as a foil for the buttery salmon.





It is excellent hot, but can also be served cold. Small cuts can be cooked in the same way, but should be left whole: a tail end is good for this method.

BAKED SALMON FILLETS OR STEAKS





Salmon fillets, any portion size, boned and skinned


Onion powder, to taste be generous


Garlic powder, to taste be generous


Dried dill, to taste be generous


Mrs. Dash, to taste be generous


Mayonnaise


Paprika





Wash and dry fillets. Spread thin coat of mayonnaise over salmon. Spray Pam or similar product over Pyrex or tin foil pan or rectangular pan (depending on amount and size of portions).





Sprinkle seasonings over fish ending with paprika. Bake in 375 degree oven for 10 to 20 minutes or until fish flakes easily.





Note: This recipe is wonderful used for boned and skinned chicken.

oven poaching: place salmon steak or filet in a pie pan with white wine, garlic and butter and bake in the oven on high heat for about 15 min.





Bronzed: coat filet with cajun seasoning and heat up a sautee pan with a spash of vegetable oil until it smokes. Sear both sides and finish in the oven.
Put the salmon steaks into a frying pan and add cold water to come halfway up their sides. Add lime juice. Heat gently until almost boiling, then turn off the heat. Turn the salmon steaks over and let them cool in the water for about 15-20 minutes, when they will be cooked.


Check that the flesh flakes easily and looks opaque.



Using your ovens broiler...paint salmon fillets or steaks with a mixture of 1 tbsp. honey and 2 tbsp. dijon mustard. (you can adjust the ration depending on how much salmon you are cooking. You only need a thin layer.) Sprinkle with fresh or dried tarragon...salt and pepper of course.
Simple and easy - spray a baking dish with pam, place the salmon in the baking dish, and lightly season with lemon pepper or a little Old Bay. Bake till flaky.

Get fresh salmon but butter on it and some bread crumbs and leave to bake yummmm
I like to season mine with lime juice, salt and pepper
