Any good salmon recipes?

i want to make my husband a really good dinner and i want to make salmon but don't really know how to make it... so anybody got any really good recipes? please do share!Any good salmon recipes?

Salmon Bake with Pecan Crunch Coating





3 tablespoons Dijon mustard


3 tablespoons butter, melted


3 teaspoons honey


1/2 cup fresh bread crumbs


1/2 cup finely chopped pecans


3 teaspoons chopped fresh parsley


6 (4 ounce) fillets salmon


salt and pepper to taste


6 lemon wedges





Serves 6.





Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.


Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.


Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

Salmon Fillets with Creamy Dill - Also good





1 1/2 cups mayonnaise


1/2 cup prepared mustard


1 teaspoon chopped fresh thyme


1 teaspoon dried oregano


1 teaspoon chopped fresh basil leaves


1 1/2 pounds salmon fillets


2 teaspoons dried dill, or to taste





Serves 4.





Preheat oven to 375 degrees F (190 degrees C).


In a bowl, stir together mayonnaise and mustard. Stir in thyme, oregano, and basil. Place salmon fillets on a baking sheet, and spread with the mayonnaise mixture. Sprinkle with dill weed.


Bake in preheated oven for 30 to 40 minutes, until the salmon is easily flaked with a fork.

Balsamic-Glazed Salmon Fillets - My FAV!!





6 (5 ounce) salmon fillets


4 cloves garlic, minced


1 tablespoon white wine


1 tablespoon honey


1/3 cup balsamic vinegar


4 teaspoons Dijon mustard


salt and pepper to taste


1 tablespoon chopped fresh oregano





Serves 6.





Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.


Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.


Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.


Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.

I love teriyaki recipes, so this is my suggestion - a teriyaki salmon recipe. It麓s easy and very tasty.





Ingredients:


2/3 cup soy sauce


1/2 cup medium-dry sherry


1 tablespoon sugar


1 garlic clove, crushed


2 teaspoons ginger


2 pounds salmon





In a saucepan, combine soy sauce, sherry, sugar, garlic, and ginger. Bring to boil over moderate heat. Place in a shallow glass pan. Marinate fish for about 30 minutes, turning several times.





Cook on well-oiled grill, 10 minutes per inch of thickness and brush frequently with marinade. Use marinade as a dipping sauce or pour over rice for good flavor.
Salmon is actually one of the easiest things you can make! Just place the fillets in a baking dish and sprinkle with seasoning (I prefer to use Lemon Pepper, but sometimes I just use salt and pepper). Cook it uncovered at 350 for around 30 minutes. When a fork inserted into the middle comes out flaky and opaque, you're done!





To serve it, I either provide lemon wedges to squeeze on it, or I make a balsamic reduction. To make this, you bring one cup balsamic vinegar and one tablespoon olive oil to a boil, then reduce the heat until it just barely bubbles, stirring frequently. After about 7 minutes, remove from heat and let it cool. It is now a reduction; a thicker version of the vinegar, and you can just lightly drizzle it over the salmon after it's on the plate. It has a sweet taste, and looks fancy to boot. (It's also low carb and all that good stuff).
Salmon With Lemon Butter Basil Sauce





The sauce is just as delicious on grilled chicken breasts as it is on salmon. If you didn't want to take the time to prepare and cook the fresh artichokes, you could use frozen or canned, although I can't say it would be quite as flavorful. See also my variations to the sauce below.





4 Salmon Fillets, About 6 Oz Each


3 Tablespoons Olive Oil


3/4 Cups of Seasoned Bread Crumbs





For The Sauce:


1/2 Sticks Unsalted Butter


Juice of 1 1/2 Large Lemons


1/2 Cup Dry White Wine


4 Medium Artichokes, Cleaned, Sauteed, And Cut Into Eight Pieces


4 to 5 Sun-dried Tomatoes, Chopped


1 Large Garlic Clove, Peeled And Minced


3 Tablespoons Chopped Fresh Basil


Salt %26amp; Pepper





To Finish If Needed:


1 Tablespoon Soft Butter


1 Tablespoon Flour





Melt the butter in a heavy saucepan. Add the garlic, artichokes, and sun-dried tomatoes and cook 3 minutes over medium low heat. Add the lemon juice, salt and pepper to taste, and cook over low heat until thickened. Just before serving, stir in the fresh, chopped basil. If your sauce does not thicken up enough, mix the soft butter with the flour and whisk in just a teaspoon or so, adding more as needed.





Preheat oven to 375 degrees F. Brush the salmon with the 3 tbs. of oil then sprinkle on the crumbs. Place hot oven and roast until done, but still moist inside. (cooking time depends on the thickness of your salmon fillets). Or, grill the salmon on a hot grill until cooked. Serve each steak topped with a scoop of the sauce.





Cooks Tip: The salmon should flake with a fork when done, but the center should remain moist and pink.





Variations: When I am in the mood, I add a teaspoon or so of drained capers, or 10 to 12 pitted and chopped black olives to this sauce.
We like to cook ours on the bbq. I usually buy the fillets and not the cutlets. I let the salmon come to room temp before cooking so they wont stick, then sprinkle lightly with chilli flakes, spray with a little olive oil spray and then cook on the solid plate. Its as easy as that. Cook presentation side down first, you can see the fish cooking from the side, it goes a lighter colour. When its about half way done turn it over and cook till skin is crispy but still a little opaque in the middle as the fish will continue to cook after you remove it from the heat. place on a plate and loosely cover with foil and allow to rest for half the time it took to cook. Then serve with whatever you wish. Thats it. Delicious. Salmon is one of my all time favourites. Yum!





Hint: Throw some asparagus spears that have been tossed in a little olive oil and sprinkled with rosemary on the plate while the salmon is cooking as asparagus tastes great char grilled. When you serve your salmon lay a few asparagus spears diagonally across the top. Looks impressive and tastes fantastic.
Put the salmon into a baking pan. Cover the salmon with butter, sliced onions, garlic, and sliced oranges. Add some seasons to taste, and then bake for 20 minutes at 400 degrees fahrenheit.
