Easy baked salmon recipe?

I've never cooked salmon before. Does anyone have an easy healthy recipe for baked salmon fillets? Thanks!Easy baked salmon recipe?
Cut a large square of baking paper, place it on top of a larger square of foil and place the salmon on top.





Slice some lemon and fresh herbs over the salmon, maybe some fennel if you have any, then fold all the sides up into a little sealed parcel. Before you seal it up, add some white wine or stock and a tiny drizzle of olive oil then scrunch the top together. Pop it in the oven for about 15 minutes (You can do this with any whole fish and will take 30-50 minutes depending on the size of the fish. It's great for an easy, impressive dinner party ) The fish will stay really moist and you don't have to worry about it drying out if you overdo it a bit.





Make sure you take the sealed parcel to the table then open it up in front of your guests (or yourself) so the lovely cooking smells steam out over the table.





Serve with steamed new potatoes.

INGREDIENTS:


vegetable oil spray


3/4 pound salmon fillet


1 tablespoon Dijon mustard


1/4 cup parsley, fresh, chopped


1 teaspoon oregano, dried


1/2 teaspoon thyme, dried


1/2 cup plain bread crumbs


salt and pepper to taste


1 egg white


PREPARATION:


Preheat oven to 350掳. Line a baking tray with foil and spray with vegetable oil spray, Wash salmon, pat dry, and spread mustard over the top. Mix parsley, oregano, thyme and bread crumbs together. Season with salt and pepper. Blend in egg white to bind mixture together. Spread over mustard. Bake in oven for 20 to 25 minutes, depending on thickness of fillets. Remove from oven and serve on individual plates with rice.


Serves 2.
For a small fillet, allow perhaps half an hour. A large fillet may take an hour or more. (If is seems that the fish is taking too long, turn up the heat somewhat; this may produce a slight crust, but the center will remain moist.)





Salmon fillet, any size (1/3 pound or more per person)


Thyme (optional)


Salt and pepper


Dry white wine, or water


Ceramic or Pyrex baking dish, unoiled, to hold the salmon





Baking will take place at 275 or 250 degrees F. There is no need to preheat oven.





Place salmon in baking dish. Moisten with a little white wine, and sprinkle with optional thyme. Season with salt and pepper to taste.





Bake uncovered until done, about 125 degrees on the little dial thermometer (see Basics).





Variations


Any of the coatings in the Baked Fillets section may be considered.


Thin lemon slices, sprinkled with brown sugar, work very well here. Use these with or without a bed of spinach under the salmon.

Preheat your oven to 350.


Put your salmon on a pan, or in a baking dish.


Sprinkle with seasonings (I use garlic powder, onion powder, pepper, and season salt)


Add some Butter or Margarine on top to keep the salmon from drying out during the baking.





Bake for about 45 minutes, or until the salmon flakes up some when you stick a fork in it.





Sprinkle some Parmesan cheese on top and leave in the oven for another 10 minutes or so; heat on or off.





Let cool some and serve.
