Any good salmon recipes?

do you have any low fat salmon recipes? (entrees)Any good salmon recipes?
Bake it in a covered casserole on a bed of fresh spinach (add a little water to the dish) and season with fresh or dried dill and garlic, salt and pepper. You can squeeze a little lemon juice on it to serve it.





I also like to poach it in white wine, also seasoned with fresh dill and garlic. Very moist that way.Any good salmon recipes?
Salmon Piccata


Four 6-ounce salmon fillets


Kosher salt and pepper


1 tablespoon butter


1 clove garlic, minced


1 cup all-natural chicken broth


Juice from one lemon (about 3 tablespoons)


1 tablespoon all-purpose flour


2 tablespoons capers, drained


2 tablespoons finely minced fresh parsley

Instructions:





Preheat the oven to 375掳F. Sprinkle both sides of the salmon with salt and pepper, place on a baking dish, and cook until the salmon flakes easily with a fork, about 12 to 14 minutes. While the salmon is cooking, melt the butter in a small saucepan over medium heat. Add the garlic and cook for 30 seconds. Whisk together the broth, lemon juice and flour until well blended and add to the saucepan. Bring the mixture to a simmer, stirring constantly. Continue to simmer and stir gently until the liquid thickens slightly, about 2 minutes. Stir in the capers and parsley. Place the cooked salmon on a plate and drizzle with the sauce. Serve with rice and broccoli on the side.
LOW - FAT SALMON PATTIES





14 oz. salmon, boned


2 eggs


1 sm. onion, finely chopped


1 tsp. dill weed


6 tbsp. bread crumbs


1 tsp. lemon juice


2 dashes hot sauce





Blend all ingredients together. Fry in 8 teaspoons reduced calorie butter.





BAKED SALMON LOAF (#2) (LOW FAT)





1 tall can pink salmon


1 med. size onion, diced


1 egg or 1/4 c. Egg Beater


2 slices white bread


Dash of ground pepper





Empty salmon and liquid into mixing bowl. Mash salmon, bones and liquid together with a fork. Add diced onion and mix. Add egg and pepper and mix. Break bread into small cubes or pieces and mix. Spray loaf pan with Pam or butter the pan. Form salmon loaf with fork. Bake at 350 degrees for 25 to 30 minutes or until lightly browned.





BAKED SALMON STEAKS





3 salmon steaks (about 1/2 lb each)


lemon juice


Ritz crackers, crumbled


garlic and onion powder


3 pats butter (1 tablespoon each)


salt and pepper, to taste


1 tablespoon fresh parsley, minced





Spray a shallow sided aluminum baking pan with olive oil spray. Place fish steaks on pan, each with a pat of butter on top. Sprinkle evenly with garlic and onion powder and a pinch each of salt and pepper. Crumble the crackers evenly your hands) over the top of the fish (using your hands). Sprinkle with minced parsley.


Broil (on the top rack), without turning, until the edges of the fish are browned and the flesh is a whitish pink (no longer clear) and it starts to look flaky when touched with a fork. This will take about 10-15 minutes, depending on your oven and the size of the fish steak.





Squeeze lemon juice over top before serving garnished with a sprig of fresh parsley and lemon wedges.
Very easy and delicious salmon recipe asian style.Buy a bottle of kecap manis (Indonesian sweet soya sauce) and a jar of fried onion pieces from you local asian shop. Pour three tablespoons of kecap manis over your salmon fillet and sprinkle with onion bits (they form a nice crust on top). Bake in moderate oven for 15-20 minutes. Nice served with asian stir-fry veggies.
Salmon Croquettes





1 can salmon, remove bones and gristle


1 c crushed cracker crumbs


1 egg


mix all together, make patties and fry in moderately hot oil. Brown on both sides.
sprinkle ms. Dash.with or with out lemon.
