What are your favorite healthy recipes for salmon or tilapia?

get some tinfoil double the size of the salmon, place it on the foil and rub with olive oil, then scrunch up the sides so it makes a basket out of the foil, leave a gap at the top and pour in some lemon juice and some corriander and a clove of garlic, bake in the oven at about 180 for 20 mins depending on the size.What are your favorite healthy recipes for salmon or tilapia?
For salmon, I grill it with a zesty lime or citrus marinade and grilled vegetables. You can squeeze lemons or limes over the grilling salmon (cook it on a piece of greased foil to catch the sauce and keep it from sticking) and add your favorite spices. Be creative :)

It's very simple, but this is my favorite way to eat tilapia...


Cut up a bell pepper and a red onion and add it to a baking sheet with your filets. The moisture from the fish will keep the veggies from burning and the flavors from them will infiltrate the fish. MMMMmmm!
Roast potatoes and parsnips with steamed butter beans.





Brush the fillets with melted butter (both sides), season with a little salt and place on a baking sheet.


Add to the oven 10 minutes before serving, turning once.


Serve with a creamy white parsley sauce.
I poach the salmon w/ lemon slices, some basil, celery, rosemary.





As for tilapia, we sautee it in olive oil, garlic, onions and coconut sauce.
Salmon - grilled on cedar plank and served with orange and shaved fennel salad


Tilapia - dredge in flour and shake off excess, drench in egg-moo mixture, coat with panko and bake on lightly greased sheet pan
