Know any quick, easy salmon recipes?

Cumin Dusted Salmon Fillets Recipe.


Ingredients


1 teaspoon ground cumin


1 teaspoon paprika


1/2 teaspoon salt


1/2 teaspoon freshly ground black pepper


4 6-ounce salmon fillets (about 1 inch thick), skinned


to taste, cooking spray

Preparation Instructions


Combine first 4 ingredients in a small bowl. Rub both sides of fish with spice mixture.

BLACKENED SALMON


戮 lb. (3 sticks) unsalted butter, melted in a skillet


6 fish fillets 陆 to 戮 inch thick





Seasoning mix: ( or by Zatarains or Tony鈥檚 creole seasoning mix)


3 tbsp. sweet paprika


3 tsp. Salt


3 tsp. Onion powder


3 tsp. Garlic powder


1 tsp. Ground red pepper (preferably cayenne)


1 tsp. White pepper


1 tsp. Black pepper


1 陆 tsp. Dried thyme leaves


1 陆 tsp. Dried oregano leaves


Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom (the skillet cannot be too hot for this dish), at least 10 minutes.


Meanwhile, pour 2 tablespoons melted butter in each of 6 small ramekins; set aside and keep warm. Reserve the remaining butter in its skillet. Heat the serving plates in a 250 degrees oven.


Thoroughly combine the seasoning mix ingredients in a small bowl. Dip each fillet in the reserved melted butter so that both sides are well coated; then sprinkle seasoning mix generously and evenly on both sides of the fillets; patting it in by hand. Place in the hot skillet and pour 1 teaspoon melted butter on top of each fillet (be careful, as the butter may flame up). Cook, uncovered, over the same high heat until the underside looks charred, about 2 minutes (the time will vary according to the fillet's thickness and the heat of the skillet). Turn the fish over and again pour 1 teaspoon butter on top; cook until fish is done, about 2 minutes more. Repeat with remaining fillets. Serve each fillet while piping hot.


To serve, place one fillet and a ramekin of butter on each heating serving plate.





Buttered Noodles


1 package (12 ounces) dried egg noodles


1/4 cup (4 tablespoons) butter, preferably unsalted


Salt and pepper to taste


Chopped fresh parsley for garnish


Cook the noodles in lightly salted water according to package directions. Drain and return to pot. Heat the butter in a small saucepan over medium-high heat until brown, watching carefully to make sure it doesn't burn. Pour the butter over the noodles. Add salt, pepper and parsley; stir until well-combined. Serve immediately.





Green Beans Almondine


1 lb. fresh green beans


1/2 c. cooking oil


1/2 tsp. salt


1 toe garlic, whole


1 c. sliced almonds


Wash and slice green beans 1 1/2 inches long. Toast almonds in oven until light brown. Bring 3 quarts of salted water to a boil. Cook uncovered for 5 minutes, then place beans in ice water to shock them, and keep their color bright green. Refrigerate.


When ready to serve, cover the bottom of a skillet with cooking oil. Add garlic, then green beans and stir fry until heated through. Fold in almonds and serveKnow any quick, easy salmon recipes?
maple salmon





INGREDIENTS


1/4 cup maple syrup


2 tablespoons soy sauce


1 clove garlic, minced


1/4 teaspoon garlic salt


1/8 teaspoon ground black pepper


1 pound salmon








DIRECTIONS


In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.


Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once.


Preheat oven to 400 degrees F (200 degrees C).


Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.
Salmon Fillets Dijon





4 (6-oz) salmon fillets


2 to 3 Tbsp Dijon style mustard


1/4 cup dry Italian breadcrumbs


1/4 cup butter or margarine, melted


salt and pepper to taste





Preheat oven to 400潞


Line a shallow baking pan with foil.


Place each fillet on top of foil, skin side down.


Spread top and sides of each fillet wit a thin layer of mustard, using 2 teaspoons for each.


Cover mustard with a layer of breadcrumbs.


Drizzle butter over tops of fish.


Bake until fish are opaque in center, about 15 minutes.


With spatula, lift salmon to serving plates, leaving skin on baking sheet.


Serves 4
Teriyaki Salmon Steaks





A convenient way to serve salmon.





* 1/3 cup Lawry's Teriyaki Marinade with Pineapple Juice


* 1/4 cup sherry wine


* 2 tablespoons orange juice


* 1 tablespoon Dijon mustard


* 1 1/2 pounds salmon, cut in 4 1-inch steaks


* 1 large tomato, diced


* 1/2 cup thinly sliced green onions





In medium bowl, blend together Teriyaki Marinade with Pineapple Juice, wine, orange juice and mustard with wire whisk; reserve 3 tablespoons for grilling. In re-sealable plastic bag, combine salmon and marinade mixture; seal bag. Marinate in refrigerator 1 hour. In small bowl, combine tomato and green onion; set aside. Remove salmon from marinade. Grill or broil salmon over medium-high heat, 3 to 5 minutes, brush ing once with reserved marinade. Turn salmon over. Spoon vegetables over salmon; cook 3 to 5 minutes longer or until fish just begins to flake.





Makes 4 servings

* Cook time: 10 minutes
BBQ SALMON





Lightly brush salmon with olive oil. Sprinkle with garlic salt, pepper and LOTS of dried dill weed. BBQ on both sides about 5-8 min, each (over mesquite chips, if possible).... serve with this sauce: 1/4 c. EACH sour cream %26amp; Dijon mustard, mixed with 2 TB. dried dill weed
Baked salmon or BBQ salmon.





Baked: Simply brush with melted butter or water and put into oven and bake for a bit until ready. You can squeeze lemon juice on it since it's seafood.





BBQ: Brush BBQ sauce on the fish and bake/ cook until ready. 'Tis good!
Down South Salmon Patties





1 can salmon


1 egg


1/2 cup diced onions


a Little flour


salt %26amp; Pepper to taste





mix all ingredients together.


form into a patty


fry in oil on med heat until brown on both sides
