Any good salmon recipes?

I was wondering if anyone had any great salmon recipes. (preferably Healthy). and also something that would go good with it. Usually i put it over a bed of rice, but im geting kind of sick of rice.Any good salmon recipes?
This is an amazing dish!!!





Salmon Filet with Mango Cilantro Salsa:





4 6-ounce portions salmon filet





Mango Cilantro Salsa:





1 ripe mango, peeled and 陆-inch diced


录 cup chopped scallion, green part only


录 cup diced red bell pepper


1 tablespoon finely diced fresh jalapeno


1 tablespoon chopped fresh cilantro


1 small clove garlic, minced


1 tablespoon freshly squeezed lime juice


录 teaspoon salt


陆 teaspoon extra-virgin olive oil





Bake salmon filet at 400潞F for 15 to 20 minutes, depending on the thickness of the salmon. For Mango Cilantro Salsa, lightly toss all ingredients in bowl. Chill in refrigerator for at least 1 hour for flavors to meld. Serve salsa as an accompaniment to salmon. Mango Cilantro Salsa also goes nicely with grilled meat or chicken.Any good salmon recipes?
Line a larger baking pan with foil. Slice some onions and put a few pats of butter on the foil and let the butter melt in the pre-heating oven. Once the butter has melted place your salmon on top of the onions and butter. Put more onions and a tiny bit more butter on top(I'm talking slivers) I like sprinkling mine with Mrs. Dash Salt Free Garlic and Herb or Old Bay Seasoning, before baking it at 350 for about 30 to 40 minutes...this is for a whole side of Salmon...I always serve mine with Grits. Sounds a bit strange but it's awfully good as a side dish.
*******SALMON FILETS


1 1/2 lb. salmon fillet per person


1 pat of butter on each side


1 hand squeeze of lemon on each side


Sprinkle of parsley per side


3 sprinkles of garlic salt to taste per side


3 sprinkles of pepper per side


3 sprinkles of paprika


Put salmon fillets on tin foil covered broiler pan. Put butter, lemon, parsley, garlic salt and pepper on top. Sprinkle on paprika. Broil 7 minutes each side. Delicious.





********VEGETABLE SIDE DISH


1/2 lb. fresh green beans


2 lg. potatoes


5 cloves garlic


4 tbsp. olive oil


Crushed hot pepper to taste


Saute garlic in olive oil until slightly browned. Add potatoes and beans and pepper. Cook on medium heat until potatoes are soft and mushy but still in chunks.
Put your salmon in foil and smother the top with red (or green but red is best) pesto, sprinkle a little lemon or lime juice around it (to keep it moist) and seal and cook for about 15/20 mins (until you can smell it). Gorgeous with new potatoes, salad, pasta or even in a fresh bread roll. Actually to be extra healthy I put it on a bed of wilted spinach (yuk to spinach but quite nice with salmon and pesto). Gets another portion of veg in your diet.
grill it put lemon pepper and lemon juice on it and make a pasta salad
make a tin foil pan and put salt pepper and a lemon slice on it if you can. also put some rosmary on it for a good kick. maby some red wine in the pan
