Salmon in Wine Sauce with Sage

INGREDIENTS:

* 2 1/2 pounds salmon fillets

* 1 1/2 teaspoons rubbed dried sage leaves

* Salt and ground black pepper

* 2 tablespoons Filippo Berio Olive Oil or Filippo Berio Extra Light Olive Oil plus some for the baking dish

* 1 cup dry white wine

DIRECTIONS:

1. Preheat the oven to 400 degrees F. Coat a 13 x 9-inch baking dish with oil.

2. Season the fillets evenly with the sage. Sprinkle with salt and pepper. Place in the baking dish. Drizzle with oil. Pour the wine into the dish, being careful not to pour it directly on the fish. Cover with aluminum foil.

3. Bake for 25 to 30 minutes, or until the salmon is opaque in the center.

4. Remove the fillets to a platter. Pour the pan juices into a saucepan. Boil for about 5 minutes or until reduced by at least half. Season with 1/8 teaspoon salt. Pour over the fillets.
Here is my favorite salmon recipe that I鈥檝e made countless times. The combination of the spices (chili powder, cumin, cinnamon) and brown sugar makes it slightly sweet and very flavorful.

The recipe calls for pineapple juice so I always get a can of pineapple rings, use the juice and serve the salmon later with the pineapple rings. I also like to serve rice and grilled/broiled asparagus with the salmon.

The original recipe calls for 4 salmon fillets but I always only make 2.

Barbeque Roasted Salmon

1/4 cup pineapple juice

2 tablespoons fresh lemon juice

2 (6-ounce) salmon fillets

2 tablespoons brown sugar

4 teaspoons chili powder

2 teaspoons grated lemon rind

3/4 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon ground cinnamon

Cooking spray

Lemon wedges (optional)

Combine first 3 ingredients in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally.

Preheat oven to 400掳.

Remove fish from bag; discard marinade. Combine sugar and next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish; place in an 11 x 7-inch baking dish coated with cooking spray. Bake at 400掳 for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired.
