Any great marinating and baking idea recipes for salmon that you've tried?

BAKED SALMON





4 salmon fillets


1/2 tsp. salt


1/4 tsp. pepper


1/2 tsp. paprika


1/2 tsp. thyme


1 stick butter


1 c. cracker crumbs


1/4 c. diced onion


1 lime





Preheat oven to 350 degrees. Season the fish with salt, pepper, paprika, and thyme. Cover with fine cracker crumbs. Place in 9x13 glass pan. Put diced onions on crackered fish. Pour melted butter over fillets. Garnish with slices of lime. Bake for 25-30 minutes until done. Don't overcook.





MARINATED BAKED SALMON





4 salmon steaks


1/2 c. brown sugar


4 tbsp. melted butter


3 tbsp. soy sauce


2 tbsp. lemon juice


2 tbsp. dry white wine





Wash and pat salmon dry. Combine sugar, butter, soy sauce, lemon juice and wine. Place salmon steaks in a flat glass dish. Pour marinade over fish. Depending on your time schedule, this can stand up to 6 hours but no less than 1 hour, tightly covered. Place in a baking dish and bake 15 minutes in a preheated 400 degree oven. Lemon, herb %26amp; garlic marinade


Ingredients


2 lemons, halved


60ml (1/4 cup) olive oil


4 fresh thyme sprigs, leaves picked


2 fresh rosemary sprigs, roughly chopped


2 garlic cloves, crushed


Freshly ground black pepper


Method


Juice the lemons. Cut each lemon half in half again. Place the juice, lemon pieces and oil into a large screw-top jar.


Add thyme, rosemary, garlic and pepper to taste. Shake to combine.


How to use: Marinate 10 chicken thigh fillets for 1-4 hours before barbecuing, chargrilling or pan-frying; add salt to taste and marinate 300g firm tofu for 4 hours before pan-frying or chargrilling; marinate 400g mushroom caps for 1-3 hours before barbecuing or chargrilling.

Tip: This marinade will keep covered in the fridge for up to 2 days before using.


Variation: Asian-style marinade: Replace the lemons with 3 limes. Replace the olive oil with 2 tbs vegetable oil. Omit the thyme, rosemary and pepper. Add 6 kaffir lime leaves, finely shredded; 7cm piece fresh ginger, peeled, finely grated; 2 fresh red birdseye chillies, finely sliced; 1/2 tsp brown sugar; 3 tsp soy sauce; and 1 tsp sesame oil with the garlic.


How to use: Marinate 500g unpeeled medium green prawns for 2-4 hours before barbecuing in their shells; marinate 4 single chicken breast fillets for 1-4 hours before pan-frying or chargrilling; marinate 4 Atlantic salmon cutlets for 1 hour before pan-frying, chargrilling or barbecuing.

Make a glaze for the salmon using sour cream and dill, layer over top of the fish and bake at 350 until done. Yummy! Serve with a fresh veggie!
This is super easy- we picked up Durkee's Citrus Grill seasoning from Sam's. Sprinkle that on while grilling- tastes fab!
Mix 1 cup teriyaki sauce


1/8 cup brown sugar


1 tsp ground ginger


2 tbsp. orange juice or pineapple juice


1 1/2 tsp. dijon mustard


Mix together and make a paste. Separate and put marinate in 2 bowls.


Brush on fresh salmon fillets and put in fridge.


When time to cook, broil it and continue to baste with other bowl of mixture. This will become carmelized and turn a bubbly golden brown. So good. Can be done on the grill also.
