Salmon Salad

Salmon nachos

and my favorite Salmon Cakes (similar to crab cakes) Break the salmon up and mix it with some bread crumbs, diced onions, bell peppers, garlic black pepper, salt, and an egg yoke as a binding agent. Pan fry for a minute or two on each side. The wet ingredients and short cook time should prevent your salmon from drying out.
All of the above answers are great. salmon on green salad is tasty and great protein, you can also mix up a cup of sour cream, lemon juice and a tsp of lemon zest, roughly chopped fresh dill or dried dill (this depends on taste, I like a lot), a pinch of salt, pepper and let it sit in the fridge for about an hour, then top your cold salmon with it and enjoy!
I'd make a nice white sauce and stir fry some veggies to mix with it for dinner over rice, or you can make a nice salmon salad with mayo, onion, minced colored peppers, a few capers, and a dash of dijon mustard in the mayonnaise as well. Makes great salmon salad. Add some slivered almonds as well.
Make some kind of salad out of it. Any recipe for tuna salad would work, or you could add it to just about any recipe for pasta salad. If nothing else just break it up and put it on a regular salad with your favorite dressing. You might also find a recipe for some kind of dip to make with it. Check foodnetwork.com and allrecipes.com to see what you can find.
Yeah, my friend makes a salmon chowder in the crockpot. She cuts it up and puts in milk, butter, potatoes, carrots, and some other stuff. Here is a recipe that looks good. Hope this helps. I don't know her recipe exact.

Anything you can do with canned tuna, works well with leftover salmon... salmon noodle casserole, cold on a salad, in a seafood chowder, whatever! Get creative.
you can chop it up and sprinkle it over salad with a nice vinegarette.
