Does anyone have any tasty recipes for a salmon pasta salad?

We do a nice tuna salad and I guess you can quite easily swap the tuna for salmon.





Fusili pasta


Add the salmon


Add mushrooms


A little olive oil


Green pesto sauce


A Little Red Onion


Cherry Tomatoes sliced


Sliced Cucumber.

H.'S SMOK ED SALMON AND PASTA SALAD





1/2 cup dry white wine


1/4 cup olive oil


1 tbsp. Dijon mustard


1 tsp. fresh lemon juice


8 oz. fusilli (corkscrew) pasta


1 head radicchio, torn into bite sized pieces


3/4 lb. smoked salmon, cut julienne


1/4 cup raspberry vinegar


2 eggs


1 shallot, minced


Salt and pepper


2 heads curly endive, torn into bite sized pieces


10 Italian olives, pitted


1 tbsp. snipped fresh chives





Mix wine, vinegar, olive oil, eggs, mustard, shallot and lemon juice in blender until smooth. Season with salt and pepper.


Cook pasta in large pot of boiling salted water until just tender, stirring occasionally to prevent sticking. Drain in colander. Cool completely under running water. Drain.





Mix pasta with endive and radicchio in large bowl. Add tomatoes, olives and dressing to taste; toss well. Divide salad among plates. Sprinkle with salmon and chives. 6 servings.

SALMON PASTA SALAD





1 can (15 1/2 oz.) salmon


8 oz. corkscrew pasta, cooked and cooled


4 cups torn fresh spinach leaves


2 medium tomatoes, cut in wedges


1/4 cup chopped green onion


2 tbsp. chopped parsley


Salt and pepper to taste





HERB DRESSING:





1/4 cup grated Parmesan cheese


1/4 cup olive oil


1/4 cup tarragon wine vinegar


3/4 tsp. garlic salt


3/4 tsp. crushed oregano





Drain salmon and reserve 1 tablespoon liquid for dressing. Combine salmon, flaking as you toss, with spinach, onion, parsley and cooled paste. Combine all ingredients for herb dressing, including reserved salmon liquid, and beat with wire whisk to mix. Pour over salad ingredients and toss to coat. 1 (15 1/2-ounce) can salmon


8 ounces fusilli or macaroni, cooked, drained and cooled


1 pint cherry tomatoes, cut in half


2 cups sliced cucumber


1 cup mozzarella cheese, cut into thin strips


1/2 cup chopped fresh flat-leaf parsley (Italian parsley)


1/4 cup grated fresh Parmesan cheese


Lemon Dressing (recipe follows)


Drain and flake salmon. Toss flaked salmon with remaining ingredients in large serving bowl.


Toss with Lemon Dressing and serve.


Lemon Dressing:


3/4 cup olive oil


1/4 cup lemon juice


2 cloves garlic, minced


1/2 teaspoon dill weed


1/2 teaspoon grated lemon peel


Black pepper, to taste





Whisk together ingredients until well combined.


Makes 8 servings.
Chop raw onions, red, green and yellow sweet peppers into a bowl


Add black pepper, sweet corn and mayonnaise


Add the pasta and flaked or chunks of salmon and mix well.

Yields: 4 servings





';Delicious smoked salmon tops this easy to make cool pasta salad.';





INGREDIENTS:


1 (8 ounce) package farfalle (bow tie) pasta


2 tablespoons extra virgin olive oil


1/2 pound cucumber, sliced


8 ounces smoked salmon, chopped


1 large tomato, sliced


1 small red bell pepper, julienned


salt and freshly ground black pepper to taste


1/2 cup shredded Monterey Jack cheese, divided


1/2 cup fat free blue cheese salad dressing





DIRECTIONS:


1. Bring a large pot of lightly salted water to a boil, and add farfalle pasta. Cook until al dente, 8 to 10 minutes. Drain, and rinse under cold water. Transfer to a serving bowl, and gently toss with the olive oil until all the pasta is coated. Cover, and chill at least 30 minutes.


2. Arrange the cucumber slices around the edges of the pasta. Top pasta with smoked salmon, tomato, and red bell pepper. Season with salt and pepper. Top with Monterey Jack cheese and salad dressing to serve

Salmon Pasta Salad





Note that 1.75 cups of cold baked salmon can be substituted for the canned salmon. If the final product seems too dry for your taste, additional red wine vinegar and olive oil can be added.








15 1/2 ounces red salmon


1 lb rotini pasta


2 cups carrots, thinly sliced


2 cups celery, thinly sliced


1/3 cup ripe olives, sliced


3 green onions, chopped


1/4 large red bell pepper, thinly sliced


1/3 cup red wine vinegar


1/8 cup vegetable oil


1 tablespoon virgin olive oil


1/2 teaspoon sugar


1/2 teaspoon crushed dried oregano leaves


1/2 teaspoon salt


1/8 teaspoon pepper








Rinse %26amp; remove skin %26amp; bones %26amp; other tissue from red salmon, then break into medium-size pieces.


Cook pasta according to box, then chill.


In large bowl, mix together salmon, pasta, carrots, celery, olives, onion %26amp; bell pepper.


In smaller bowl, combine vinegar, oils, sugar, oregano, salt %26amp; pepper %26amp; mix well, then pour it over salmon mixture, tossing carefully to coat.


Serve immediately, or cover, chill %26amp; serve later.








Here's another easy way:





INGREDIENTS


8 ounces spiral pasta, cooked and drained


2 cups fully cooked salmon chunks


1 1/2 cups cherry tomatoes, quartered


1 medium cucumber, quartered and sliced


1 small red onion, sliced


1/2 cup vegetable oil


1/3 cup fresh lemon or lime juice


1 1/2 teaspoons dill weed


1 garlic clove, minced


3/4 teaspoon salt


1/4 teaspoon pepper


1 head lettuce, torn





DIRECTIONS


In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

*Buy one box of Betty Crocker's Suddenly Pasta salad mix.





*Follow the directions on the box and add tomatoes and cucumbers





*Drain 1 can of pink salmon and add it to the salad, or you can cut up some grilled salmon and add some if you have that!

1 c. hot, cooked twist pasta


1/2 c. red salmon (fresh, cooked, or canned), broken into pieces


1/4 c. olive oil


1 tbsp. white wine vinegar


1/2 tsp. dijon type mustard


1/4 c. thinly sliced zucchini/courgette


1/4 c. thinly sliced celery


1/4 c. pimento strips


1/2 tsp. lemon juice


1/8 tsp. garlic salt


1 egg yolk


Lettuce leaves





In bowl, combine first five ingredients. In blender container, combine next 6 ingredients. Blend until smooth. Pour over salad ingredients. Cover and chill several hours. To serve, line salad plates with lettuce. Spoon salad onto leaves. Serves 2
