I need some good salmon recipes. Help anyone?

Seared Salmon BLT's





Ingredients


2 four ounce skinless salmon fillets, sliced about 1/4 inch thick


coarse salt


freshly ground black pepper


2 teaspoons extra virgin olive oil


Juice from half of a lemon


2 tablespoons mayonnaise


4 slices toasted sourdough bread


2 - 4 lettuce leaves


8 slices Applewood smoked bacon, fried to desired doneness


2 thick slices from the last of the summer tomatoes


10 fresh basil leaves





Method


Season salmon fillets with salt and pepper. Heat skillet over medium-high heat and add oil when hot. When oil is very hot, place fillets in skillet and sear until lightly browned, about 2 to 3 minutes per side





In the meantime, combine lemon juice and mayonnaise in a small bowl. Spread mixture on toasted bread and layer as follows: lettuce, bacon, tomato, basil leaves. When the salmon is done, place one fillet on top of the basil leaves, then top with another piece of bread and slice in half.I need some good salmon recipes. Help anyone?

Baked Salmon:





35 min 10 min prep


2 servings





1 lb salmon fillets


2 tablespoons mayonnaise


1 teaspoon lawry's lemon pepper


1 tablespoon parmesan cheese


1 cup dry breadcrumbs





1. Preheat oven to 350掳F.


2. Fillet salmon and place skin side down on a glass baking dish.


3. Spread a generous amount of mayonnaise; cover entire top of fish.


4. Sprinkle liberally with seasoned salt, cheese and dry bread crumbs.


5. Bake about 25 to 30 minutes, uncovered.


6. Place under broiler until top turns brown.
1. Butter poached salmon: (2 steaks) Using unsalted butter melt in pan with cover, place your salmon steaks in (low fire), turn after one minute, divide the juice of one lemon and pour 1/2 over each piece, sprinkle them with dill, cover and cook until done.


I serve this with fresh asparagus and saffron rice.





2. Broil salmon, when cool, flake and add to your own recipe of macaroni salad.





3. Flaked salmon, chopped celery, purple onions, greenpeppers, mixed with mayonaise (like tuna salad) and stuff peeled half avocados. Place on crispy lettuce leaves, decorate with quartered tomatoes, boiled eggs (halved) (sometimes I devil the eggs) serve with gazpacho and you have a nice summer lunch.
I just marinade salmon steaks in teriyaki sauce over night and broil about 4 min. on each side. Serve with rice and a veggie.
Northwest Salmon Quiche





1 cup all-purpose flour


1 cup grated parmesan cheese, divided


1/2 teaspoon salt


1/4 teaspoon paprika


6 tablespoons extra-virgin olive oil


1/2 cup milk


3 eggs, beaten


1 cup sour cream


1/4 cup mayonnaise


1 tablespoon finely chopped fresh chives


1/4 teaspoon Tabasco sauce (to taste)


1/4 teaspoon salt


1/4 teaspoon pepper


1 1/2-2 cups cooked salmon, flaked and all skin and bones removed


sour cream (to garnish)





Preheat oven to 400 degrees.


In a medium bowl, combine flour, 3/4 cup Parmesan cheese, salt, paprika, and olive oil.


Press mixture onto bottom and sides of a 10-inch pie plate or quiche pan.


Bake for 10 minutes; remove from oven and reduce oven temperature to 325 degrees.


In a large bowl, combine milk, eggs, sour cream, mayonnaise, chives, Tabasco, salt, and pepper.


Stir in flaked salmon and remaining 1/2 cup Parmesan cheese.


Pour mixture into baked crust.


Bake approximately 45 to 50 minutes or until a knife inserted in the center comes out clean.


Remove from oven and let cool 12 to 15 minutes.


To serve, spread a thin layer of sour cream over the top.


Cut into wedges and serve.

..................Italian Bread Crumbs : I use Progresso


Lay some salmon on a buttered shallow baking sheet, skin side down, cover evenly with soft butter, sprinkle with Italian flavored bread crumbs till evenly covered (ends too) and broil until done. YUMM YUMM.


Serve with real mashed potatoes and french cut string beans. It's the most delicious dinners I've ever made and so simple and fast, All done with in half an hour !

I take a whole salmon (wild pacific spring is the best choice) rub inside with lemon and garlic. put a light layer of olive oil in and out. Stuff with asparagus tips an fresh thyme. wrap in foil and BBQ on med high for18-22 min. I'm sure an oven at 350 wold work. The asparagus is tender when the salmon is done .MMMMM!
