I need a really good salmon recipe for a fillet of salmon that will serve about 20 people. Any ideas?

It has to be simple...able to freeze and serve cold. I have no time the day of the event to make fuss.I need a really good salmon recipe for a fillet of salmon that will serve about 20 people. Any ideas?
Here is a really good, and easy recipe for fillet of salmon. It is a glaze made with balsamic vinegar. The glaze sauce is easy to make and quick too





4 cloves garlic


1 T white wine


1 T honey


1/3 C Balsamic Vinegar


4 T Dijon or whole grain mustard


3 T maple syrup


salt and pepper to taste





In a sauce pan coated with non stick spray, or extra virgin olive oil, sweat garlic until soft add other ingredients, and reduce over medium heat until sauce coats the back of a spoon.





Baste salmon, chicken, etc with sauce while cooking either on a grill, or in the oven at 350 degrees.





I served this at a party a few months back. It was so popular, I could not keep it on the serving plate. Even people who do not really like fish ate it up!





I suppose you could freeze the fillets after cooking, but I would opt to cook them as close to the time you will be serving them. They will reheat well if needed.
