Easy (and tasty) salmon recipes? For dinner tonight....read on...?

I have four pieces of frozen salmon (I guess they're called salmon steaks?) and I want to make something for dinner tonight. I've never cooked salmon before and want something with fairly little prep time and a great result! Any suggestions? Place defrosted salmon in a bowl and add olive oil, garlic, lemon juice, and your fav. seasonings. Let that sit for at least 30 mins or longer. Melt some butter in a pan and place your salmon in the pot and let them cook covered for at least 20 mins. (Add a little of the oil mixture to your pot when you cook the fish)





Then for a side you peel and dice potatoes into little cube like peices. Put the potatoes in a bowl and mix it together with seasonings, parsley, olive oil (little bit) garlic. Bake the potatoes at 375 for about 30 mins or untill they are brown and crispy.Easy (and tasty) salmon recipes? For dinner tonight....read on...?
Defrost the salmon. Then squeeze lemon juice all over them (about 2). Add a little salt and pepper over top and some basil. Let it soak for a little then put in the oven till done.
Salmon Sandwiches:





1 tablespoon vegetable oil





MAKES 6 SANDWICHES





PREP TIME 20 min (plus cooling); COOK TIME 15 min





Ingredients


1/4 cup soy sauce


Six 5-ounce salmon fillets, bones and skin removed


6 French sandwich rolls


Asian chili sauce





Mayonnaise


Coarse salt


1 lime, halved


1 large carrot, grated


Cilantro sprigs, to taste





1. Preheat the oven to 400掳. In a medium bowl, whisk together the brown sugar and soy sauce. Add the salmon and turn to coat.





2. Grease a 9-by-13-inch glass baking dish with the oil. Arrange the salmon in the dish, drizzle with the remaining marinade and roast until cooked through, 15 to 20 minutes. Remove from the oven and let cool for about 20 minutes.





3. Split the rolls in half lengthwise and spread each half with chili sauce and mayonnaise to taste. Place a piece of salmon on the bottom half of each roll and sprinkle with salt and a squeeze of lime juice. Top with some of the grated carrot and a few sprigs of cilantro. Wrap each sandwich with plastic wrap.
