Any good recipes using canned salmon?

I don't mind salmon patty recipes as long as it's not the basic salmon, egg, breacrumbs, onion recipe.

Salmon Dip





8oz cream cheese


1 can salmon


liquid smoke to taste


garlic salt to taste


1/4 minced green onion

I modified a Salmon-Potato cake recipe I found to use more inexpensive, shelf-stable ingredients. It's become a family favorite - we serve it several times a month. Much lighter and more delicate than traditional salmon patties.





Salmon-Potato Cakes over Greens





1 4-serving package Sour Cream and Chive or Roasted Garlic instant mashed potatoes, prepared according to package directions


1 can salmon, drained, with skin and large bones removed


1 egg


1/2 cup breadcrumbs, plus more for dipping


1/4 tsp. each celery seed and dried dillweed


salt and pepper to taste


oil for frying





Baby spinach leaves or other salad greens


Prepared salad dressing of your choice





Prepare instant mashed potatoes according to directions, but leaving out about 1/4 cup of the water called for - you want them stiff. Let cool, then add salmon, egg, 1/2 breadcrumbs, and seasoning. Mix well, form into 12 cakes. Dip each one in breadcrumbs and panfry in hot oil until browned and crispy. Keep warm until serving.





To serve: Divide baby spinach or salad greens among 4 - 6 plates, drizzle with your favorite salad dressing, top each with 2 - 3 hot salmon cakes. Serves 4 - 6.





NOTE: Kraft Tangy Tomato Bacon salad dressing is my family's favorite for this dish. Original recipe called for Honey-Mustard salad dressing, which is also quite good.

Literally, just mix it all together, adding the lemon juice, salt and pepper to suit your tastes.





It tastes Delicious, even better the day after, and on served on toast, makes the perfect Hangover cure.





You can do the same with any canned fish like Tuna, Marcel, Etc.

~SALMON BALL~


Ingredients:


1 (15%26amp;1/2 ounce) can Red Alaskan salmon, well-drained, boned and skinned


1 (8 ounce) pkg. cream cheese, softened


1/4 t. liquid smoke


1 T. lemon juice


2 t. grated onion


1 t. horseradish


Chopped parsley or pecans





Directions:


1. Blend first 6 ingredients well.


2. Shape into a ball or pack into a mold lined with plastic wrap.


3. Chill several hours or overnight.


4. Un-mold.


5. Before serving, coat with chopped nuts or parsley or both!


6. Serve with crackers and garnish, if desired, with parsley, lemon wedges, black olives and SALMON PINWHEELS.


May be frozen. Yields 1%26amp;1/2 cups and serves 24.





~SMOKED SALMON PINWHEELS~


Spread sliced smoked salmon with cream cheese seasoned with lemon juice, salt and pepper. Place a row of capers at one end and roll up like a jelly roll. Chill. Cut crosswise in 1/2 inch pieces to make pinwheels.





~SALMON MOUSSE~


Ingredients:


1 envelope unflavored gelatin


1/4 c. cold water


1/2 c. boiling water


1/2 c. mayonnaise


2 T. lemon juice


1%26amp;1/2 T. grated onion


1/2 t. Tabasco


1%26amp;1/2 t. salt


2 T. finely chopped capers


1/2 t. paprika


2 cups canned salmon, well drained and mashed


1/2 c. whipping cream, whipped





Directions:


1. Soften gelatin in cold water. Add hot water and stir to dissolve. Cool.


2. Fold remaining ingredients, except cream, together.


3. Add gelatin and mix well.


4. Fold in whipped cream.


5. Pour mixture into an oiled fish mold or individual molds.


6. Refrigerate until set.


7. Un-mold and top with DILL DRESSING or SAUCE VERDE.


8. Serve with crackers.


Serves 8





~DILL DRESSING~


Ingredients:


3/4 t. salt


1/4 t. white pepper


1 t/ grated lemon rind


2 c. cream


3 T finely chopped fresh dill or 1 T. dill weed





Directions:


Combine ingredients and blend well. Chill for several hours before using.





~SAUCE VERDE~


Ingredients:


1 c. mayonnaise, divided


1 t. dry mustard


1 c. sour cream


1 drop green food coloring


2 T. chopped chives


2 T. chopped parsley


2 cucumbers, peeled and chopped





Directions:


1. Thoroughly blend 2 T. mayonnaise with the dry mustard.


2. Add remaining mayonnaise and all other ingredients.


3. Chill.
Heat up a skillet and throw in a little olive oil, sliced green olives, sliced onion, (mushrooms if you like them), sliced black olives, and sliced tomatoes. Suatee this quickly then toss in the salmon. Cook angel hair pasta.....toss the pasta in the the skillet with the salmon when it is all done......put on a plate and top with shaved romano cheese.
Use it in wraps or on pita bread with lettuce, mayo, peppercinis, tomatoes, and some pepper. Serve with a side of sweet potato fries.
In a salad with spinach and iceberg lettuce, mandarin oranges, cherry tomatoes, and almond slices.
