This recipe:








6 fillets Salmon


1/4 cup Bourbon


4 tablespoons Butter


1/2 cup brown sugar








Directions:








Melt butter and brown sugar over medium heat, in a pan large enough to cook the salmon. Add salmon filets, cook 6 minutes. Flip Salmon, Add bourbon, and finish cooking fish, approximately 6 more minutes or until opaque and flakes with a fork. its fine of course you will change the recipe some but thats what is so nice about cooking you have the pleasure of changing things to your own taste i do it a lot with aclohol you will have your own variation to a recipe.......i do it a lot of time with similar spices.and meats and seafood ..and even it may call for shrimp and i have sub scallops ...the recipe looks good a lot of people dont realize that sugar can be used on fish......Is it OK to substitute rum for burbon in salmon a recipe?
ABSOLUTELY!!! Rum is made from cane, so when you cook it down, the flavors get concentrated %26amp; really sweet. Suggestion: add some chopped green onion on top for a little kick %26amp; presentation.
Oh yes by all means! My hubby is a retired salmon fisherman, and he has always used rum rather than other alcohols.


With the butter and brown sugar you may be surprised at how wonderful it works!

I have four nice size salmon filets in my freezer and I haven't touched them. I just don't know how I should cook them. Any ideas? And something not to complexed, I usually don't have a lot of time to cook.Anyone have an easy recipe for salmon?
Salmon Recipe


Ingredients:


Heat 2 Tbsp butter until melted and then take off heat and add,


1 tsp worchestershire sauce


1 tsp lemon juice


2 tsp of dill





Directions:


Brush a salmon filet or 2 salmon steaks with the sauce and then place on a broiler pan that has been coated with oil.





Boil for about 10 minutes at 450 degrees being careful not to overcook the salmon.

Grill them and brush them with orange juice, honey and garlic mixed together..it's really good.
defrost them, put each fillet on its own peice of foil (larg enough to fold over and seal) add fresh lemon, lemon pepper and any other seasonings desired, close foil into pouch, throw it on the BBQ or in the oven (which ever you prefer) and its done in about 10 mins.
Simple Salmon: 5 minutes cooking time.


Defrost the salmon in cold running water. Pre-heat broiler to 'Broil'


Salt and Pepper the NON-skin side of the salmon. Heat skillet over high heat with 2 tablespoons of oil (olive if you got it) and 1 tablespoon of butter. When the oil is hot but not burning put the salmon SKIN SIDE UP into the pan and let it cook for about three minutes. If your skillet is oven-safe then put it under the broiler with the salmon still skin side up for 2 minutes. Then its done. Take it out of the broiler, flip it over onto a plate, squirt some lemon or whatever and eat it.

add one egg (small onion chopped, optional)

Get two sheets of foil one on top of the other. Place fillet (thawed) in middle. Cut up a lemon an place slices on top of fillet. Sprinkle with salt and pepper. You can add some dill seasoning too if you like. Tuck up the foil into a packet so the fold is in the middle. The put on a BBQ for about fifteen mintues on medium heat. Check the fillet until it flakes easily with a fork.

Put them in a bowl, add a little water, soy sauce, ginger (can use powdered for ease) and crushed garlic (also honey if you like a sweeter taste).





Cover and vent, microwave for 4 mins. I do this a lot - steam some green veg or make a salad to go with it - super quick, healthy and delicious :)
I love to bake salmon....put it in a heat resistant pan ad a little bit of olive oil, stuff it with 1-2 cloves of garlic, add the juice from 1/2-1 lemon add salt/pepper and whatever other spices you like and bake it at 350-400 for 15-25 minutes ....it's delicious and healthy. Works fantastic with french fries, mashed potatoes, spinnach...or any other veggies you have:)

I like salmon best on the grill. Use foil. Butter. Serve with lemon wedges. Don't overcook. Also love it baked with butter and Worcestershire sauce or butter and soy sauce. Dill goes great with salmon; just don't overdo it. I also love it raw as sushi dipped in soy sauce mixed with wasabi (you have to buy sushi grade salmon for this)
Put them on a broiler pan that you have greased with cooking spray. Set the oven rack so that the salmon is 4-6 inches from the top heating element. Skin side down, sprinkle with salt and pepper - broil high for about 15 min (give or take depending on the thickness - check by putting a knife in the thickest part - if it slides in easily with no give, it's done). Make a quick sauce of equal parts mayo and sour cream, some fresh or dried dill, salt, pepper and lemon juice (let it hang out in the fridge for a couple of hours before serving). Yummy!

Directions:





Cut the cherry tomatoes in half.


Mince the mushrooms. Put the salmon in the center of each foil sheet, add the tomatoes and mushrooms around the fillet.





Put on top, the strand of dill, a little pressed garlic, a few drops of lemon juice.


Pepper, salt and finish with a trickle of olive oil.





Close the foil in a bubble and put them in the oven for 25-30 min at 350掳F OR 180 C.

Marinate a salmon filet in a ziploc bag for about an hour with the following:





Tequila


Lime


Pinch or two of sea salt


chopped Mint leaves





enough to have the fish soaking. . .





grill skin side down until just done in the center (no more than 20 minutes).





Make a sauce:





Juice of one lemon


1/4 cup of honey or pure maple syrup


heat until blended.





Glaze salmon with sauce just before serving. . . serve with asparagus and a rice dish.

I love to put butter, garlic and parsley on top of the salmon steaks and put them in the oven, while I make a tomato vegetable sauce on the side and rice or potatoess, potatoe wedges are really nice. When I cook salmon, I just get some lemon pepper marinade, Some fresh mince ginger, and some fresh minced garlic. Marinate the salmon in that with some salt and pepper for about 30 min. Then grill it skin side down first, flip once and your done! Make sure it's medium rare to medium. Do not over-cook. Try some steamed veggies with a little salt and pepper, and butter for a side. Maybe some rice pilaf or rice-a-roni for another.

    I love Salmon and we eat a lot of it. This is truly my best advice:





    If you and your family don't really care for fish, do not start out with Salmon. Salmon has a very distinct and what you would consider 'fishy' taste to it. Any recipe that would please you would completely ruin the Salmon. I would suggest starting off with a subtler fish like Sole or Halibut. Really.

    juice of 3 lemons


    3 Tablespoons oil (olive or canola)


    3 cloves garlic, minced

    1 red bell pepper, julienne

    3 tablespoons teriyaki sauce

    I agree with Mrs. White. Salmon is definitely not the fish to try for people who don't like fish.





    I would start with something much more mild like cod or even halibut or grouper. If you want something with some nice meaty texture but a nice non-fishy flavor, try red snapper.





    People who don't like fish usually don't like it because they haven't had truly fresh fish, properly cooked. Fish should never smell, look or taste ';fishy';, if it does, it is spoiled.





    When you are buying fish, even fillets, it is preferable if you can touch and smell them before you buy them. Fish should be firm, the flesh should never be separated and it should not have any kind of sticky or slimey coating on it.





    Fish cooks quickly and is truly best simply seasoned with salt and pepper and some citrus, maybe.





    Serve fish with rice and a favorite vegetable, it will only enhance the experience.
    How about Salmon Cilantro Burgers? The flavors in the burger and the sauce that accompanies it are fresh-tasting, healthy, and it doesn't taste fishy at all.

    Oh boy -- yeah it's risky. I am not a huge fish fan, but I can tolerate salmon. It has taken me years to try it. What got me started was eating smoked salmon. Oh my goodness, that stuff is great. My mother in law makes a smoked salmon spread that is also good -- not exactly healthy, though.





    Following is a recipe I can tolerate, although not my favorite (just being honest) ... I would much rather have grilled catfish -- now, that is good! Be prepared to have a backup dinner in case your family doesn't like it. I serve this dish with a sauce made with a 3T. plain yogurt mixed with 3T. fat free sour cream, a capful of lemon juice and a sprinkle of dry dill and a sprinkle of dried parsley:





    Salmon with Lemon and Dill


    1 pound salmon fillets

    Were I you, I would reduce the whiskey on the stove, add a little spices, seasonings and sugar, and use it as glaze for the salmon. That would be pretty tasty.

    2 sticks butter


    Flour (for coating fish)


    Lemon juice


    Salt (optional)


    Pepper (optional)


    4 lg. salmon steaks, fillets


    10 oz. mild cheddar cheese


    2 c. sour cream


    1 c. sauteed mushrooms





    Roll salmon in flour. Melt 1 stick of butter and add lemon juice to taste. Pour butter over salmon in large baking dish. Bake at 350 degrees until salmon is flaky (about 30 minutes). Remove from oven.


    Mix the second stick of butter and sour cream, heat over low flame and set aside. Shred cheddar cheese. Pour 1/2 of the sour cream mixture over salmon and top with cheese and sauteed mushrooms. Place under broiler until cheese is bubbly. Serve with remaining sour cream mixture as sauce for dipping.





    BROILED SALMON





    1 (20 lb.) White King Salmon, filleted and boned, but with the skin left on





    BASTING MIXTURE:





    1/2 lb. butter


    1/2 tsp. pepper


    1 tsp. Italian seasoning


    2 tsp. salt


    1 tsp. garlic salt





    Place fish on broiler pan, skin side up. Broil 5 minutes or until skin bubbles. Remove skin. Baste with basting mixture and broil 5 minutes more. Baste again and turn. Broil 10 minutes, basting twice.I need some recipes for baked salmon! King/Coho...?

    3 Tbsp. olive oil


    2 clove minced garlic

    4 salmon steaks, approx. 1 1/4-1 1/2 lb. fish


    Dash cayenne pepper





    Sauce: Put all ingredients except fish in blender. Blend until herbs are fine.





    Place salmon in 13 x 9 pan and pour sauce over. Bake until done approx 20-30minutes.

    Put your salmon slice on top of an aluminum foil sheet. Season with salt and pepper. Top with slices of sliced onions and tomatoes.     Couldn't be easier - Place salmon on a square of foil, with a spoon of butter, and salt, pepper and garlic powder (amount of all of those is to your liking). Pull the sides of the foil up and fold over to make a little closed pouch. Bake on a cookie sheet in the oven at 400 for 15 minutes or so *my oven takes closer to 20 but I think it's just old*.





    You can also put a couple of onion slices or chunks or any other veggies inside the foil, cubed small enough that they will cook in that amount of time.
    You can do this on the grill or in the oven:





    Vegetable oil spray


    1-1/2 pounds boneless salmon filet about 1-inch thick (large end preferred)


    1/2 lime


    2 tablespoons white wine


    1 teaspoon mayonnaise (may substitute butter)


    1/2 teaspoon kosher salt (optional)


    1/2 teaspoon onion powder


    1/2 teaspoon garlic powder


    1/2 teaspoon lemon pepper


    1/2 teaspoon dried oregano


    1/2 teaspoon dried basil


    1/2 teaspoon dried dill weed


    1/4 teaspoon Hungarian sweet paprika


    PREPARATION:


    Preheat grill to high heat. Make a tray out of a doubled-length of heavy-duty foil large enough for the salmon filet, by folding a long piece in half and folding up all four sides, with the dull side up. (The shiny side reflects, so you want it down so as not to burn the food.) Spray the entire inside of the foil tray liberally with cooking spray. Place the foil tray on a platter or metal tray to transport to the grill.





    Place the salmon filet in the foil tray skin-side down (or boned-side up if it is skinned). Squeeze lime juice over salmon and sprinkle with white wine. Spread top of salmon with the mayonnaise.





    In a small bowl, mix together kosher salt, onion powder, garlic powder, lemon pepper, oregano, basil, and dill weed. Sprinkle the mixture evenly over the top of the salmon, then top with the sweet paprika.





    Place baking pan with foil tray on hot grill. Transfer the foil tray to the hot grill. Cook in a hot covered grill for 10 minutes per inch of thickness of the fish filet. Do not overcook or it will be dry and unpalatable. Turning is not necessary. Salmon is done when it turns a light pink color throughout and feels firm when pressed gently with the back of a fork. Whitefish is done when it turns opaque. This method works best with large, thick filets. Use a spatula to lift the salmon away from the skin to serve. Garnish with lime slices, if desired.

    This is how I make salmon and it is super quick and super good
    I eat fresh salmon at least 3-4 times a week and this is how I prepare mine...Pan Seared Salmon...





    1. Brush salmon fillet with Extra Virgin Olive Oil


    2. Season w/Sea Salt, cracked pepper, and finally Smoked Paprika (regular paprika is ok too).


    3. Heat pan to med/med high and coat with olive oil


    4. Place Fillet Skin Side Down


    5. Flip once when you begin to see a thin line of the fillet begin to cook.


    6. Remove pan from heat and continue to allow the other side to sear for about 3-4 min.


    7. Plate skin side down and sprinkle a bit of Thyme over fillet (this is optional if you dont have any thyme).





    This is my absolute favorite recipe...it comes out SOOO rich and buttery because its seared not over cooked. I hope you enjoy this as much as I do.

    BAKED SALMON AND DRESSING





    1 tbsp. butter

    3 c. zucchini, shredded

    Preheat oven to 350 degrees. In a skillet over medium heat melt butter. Add onion. Saute until tender. Add zucchini, carrot, parsley and basil; mix lightly.


    Lightly grease a 10 x 10 inch baking dish. Place vegetable mixture in prepared dish. Coat salmon steaks with lime juice. Arrange over vegetable mixture; sprinkle with salt and pepper. Cover. Bake for 30 minutes. Uncover. Bake for 10 minutes longer or until fish flakes easily.
    Salmon Pie





    I get canned Salmon. I like the Alaskan Salmon. I clean the Salmon free of skin and small bones (even though it is okay to crush them and leave them in) reserve the liquid in a cup on the side.





    I get two eggs and beat and add to Salmon along with Seasoned Italian Bread crumbs, chopped onion, chopped celery and 1/2 chopped Green Pepper. I mix this well with my hands making sure all the ingredient's are incorporated. I then add grated cheese and the liquid I had set on the side. I mix well again and add it to a pre-baked deep dish pie shell. Place it back in the oven @ 350 degrees for about 45 minutes until bubbly.





    NOTE: You an use this same recipe for Salmon Croquettes, just make patties and pan fry them in a little bit of hot oil.





    Now if I am just going to bake Salmon Fillets in the oven I marinate them in Italian Dressing and bake them @ 350-375 for about 20 minutes.
    I just put a little olive oil, garlic, dill (salt and pepper) on the salmon and bake at 400 until done (depends on the size of the fish - about 10-15 minutes, I'd say).





    Salmon is also good marinated in teriyake sauce and then baked.

    Preheat oven to 350 degrees. Place salmon in shallow baking dish and add half and half or milk so fish is half immersed. Sprinkle with dill, chives or basil and salt if desired. Bake 30 minutes, occasionally spooning liquid over salmon. Fish is done when mostly pale pink in center.

    4 salmon fillets


    1/2 tsp. salt


    1/4 tsp. pepper


    1/2 tsp. paprika

    1 stick butter


    1 c. cracker crumbs


    1/4 c. diced onion

    Preheat oven to 350 degrees. Season the fish with salt, pepper, paprika, and thyme. Cover with fine cracker crumbs. Place in 9x13 glass pan. Put diced onions on crackered fish. Pour melted butter over fillets. Garnish with slices of lime. Bake for 25-30 minutes until done. Don't overcook. Serves 4.

    1 can (1 lb.) salmon, drained %26amp; flaked


    1 1/2 c. herb seasoned stuffing


    2 tbsp. finely chopped onion


    3 eggs, well beaten


    1 (10 1/2 oz.) can condensed cream of celery





    Mix well and turn into greased 1 1/2 quart casserole. Bake at 350 degrees for 40-50 minutes.

    6 filleted salmon steaks


    1 tbsp. lemon juice


    1 chopped onion


    1 tsp. salt


    1/2 tsp. pepper


    1/4 c. melted butter





    SAUCE:





    3 tbsp. butter


    3 tbsp. flour


    1 1/2 c. milk


    1 c. grated cheese





    Put fish in baking pan and cover with above ingredients. Bake at 375 degrees 35 to 40 minutes.


    Cheese sauce: In a skillet, melt 3 tablespoons butter. Add 3 tablespoons flour; mix until smooth. Add 1 1/2 cups milk and 1 cup grated cheese. Mix until thick. Pour cheese sauce over baked fish and brown under broiler 7 to 10 minutes.








    ***BAKED SALMON LOAF





    1 (16 oz.) can red salmon, drained and flaked


    1/2 c. bread crumbs


    1 (10 1/2 oz.) can cream of celery soup


    4 tbsp. sour cream


    3 eggs, beaten





    Combine all ingredients. Pour into greased loaf pan. Bake at 325 for 1 hour. Makes 4 servings.

    1 1/2 c. flaked salmon

    Not a recipe per se ... just a method. I like to cook mine on a cedar plank (in the oven or on the grill). Just make sure you soak your cedar plank really well. Put the salmon on it, season to your liking (I use salt, pepper, garlic and lemon juice).. and cook. If you do it in the oven, make sure you put the plank on a cooking sheet.





    By the way, you can get the cedar plank from the hardware store.... just make sure it is UNTREATED. Super cheap compared to kitchen stores.

    Prep and Cook Time: 30 minutes





    Ingredients:


    1陆 lb salmon cut into 4 pieces,


    skin and bones removed


    1 small sized onion minced


    1 small sized red bell pepper diced 1/4 inch


    4 medium cloves garlic pressed


    陆 cup + 1 TBS chicken or vegetable broth


    15oz can black beans, drained


    1陆 TBS red chili powder


    about 2 cups shredded romaine lettuce, outer leaves discarded


    1 medium avocado cut into cubes


    Sauce:


    2 TBS fresh cilantro chopped


    1 TBS fresh mint chopped


    1 TBS fresh basil chopped


    3 TBS fresh lemon juice


    3 TBS olive oil


    1 TBS chopped pumpkin seeds


    salt and pepper to taste








    Directions:





    Season salmon with a little salt and pepper. Set aside while you chop and saut茅 vegetables.


    Heat 1 TBS broth in a stainless steel 10-12 inch skillet. Healthy Saut茅 onion, bell pepper and garlic in broth over medium heat for about 5 minutes stirring frequently.


    Add 陆 cup broth, drained beans, and red chili powder. Cook for another 10 minutes. Season with salt and pepper to taste.


    While beans are cooking preheat broiler on high. Place a metal skillet large enough for salmon under the heat to get hot. This takes about 10 minutes.


    Mix together in a bowl cilantro, mint, basil, lemon juice, olive oil, pumpkin seeds, salt and pepper.


    Place salmon in the hot pan and return to broiler about 5 inches from the heat source for best results. This is usually the upper part of the oven or broiler. Broil salmon for about 3-4 minutes for medium doneness. This is our Quick Broil cooking method. Serve salmon, beans, lettuce and avocado together on a plate. Top salmon and lettuce with cilantro topping.

    Healthy Cooking Tips:





    When you use our quick broil method it is best to use salmon filets that are cut from the thickest part of the fish. It will stay moister when cooked. Because ovens and broilers vary make sure you keep an eye on your salmon and check it after a couple of minutes. You can do this by sticking the tip of a sharp knife into the filet. The flesh will separate easily and it should look pink in the center. You want to cook it slightly less than how you want to eat it, as it continues to cook after you remove it from the heat. Make sure you get the pan very hot because it will seal the juices and cook the salmon on the bottom simultaneously. This also contributes to a moister fish when cooked. Keep in mind that the handle of your pan is very hot. Use a thick hot pad when removing so you don't burn yourself.Anyone have a good salmon recipe?

    TARRAGON LEMON SALMON FILLETS





    2 salmon fillets


    tarragon


    salt


    lemon slices

    Place salmon skin side down on tin foil in baking sheet; cover with butter, then put seasoning on to taste.


    Cover fish with lemon slices and tent the fish in tin foil, and bake at 375掳F degrees for 20-30 minutes.
    If you have some bourbon great, if you don't no worry.





    Mix some brown sugar and soy sauce. Enough to soak the Salmon in for four hours or overnight. If you have bourbon mix some in with it. If you don't you get the flavor of bourbon Salmon without the alcohol.





    Bake @ 350 for 20- 25 minutes or grill on the grill.

    in a sautee pan, slice 2 large blood oranges and layer them on the bottom.

    The easiest method it to use Light Italian salad dressing to coat the salmon and wrap it tightly in aluminum foil.


    I use saran wrap under the aluminum foil to keep the moisture and seasoning in.


    Use one of the quickest cycles your dishwasher has because fish doesn't take long to cook.


    4-7 minutes for fillets and 6-9 minutes for fish steaks.


    Remember seafood does not have to cook all the way through and will be most flavorful if slightly under done.


    No real seafood house will cook your fish steak more than medium

    1 can salmon


    1 beaten egg


    1 small finely chopped onion

    Try looking up a salmon loaf recipe. (Think of it as a meatloaf only with salmon instead of beef.) Not sure how low fat it is because there's a can of cream of celery in it, and egg, some bread crumbs, and some recipes call for a white sauce over the top of it.
    My mother made a salmon loaf. It took 1 can of salmon, a handful of cracker crumbs, 1 egg. These were mixed and put in a loaf pan and baked. It was served with a white sauce and sliced hard cooked eggs. I never liked that part. also served with baked potatoes, and a green vegetable.
    One receipt I've used for years is Salmon Patties. Easy to make, easy to fry, scrumptious to eat.





    1 or 2 cans of Pink Salmon (I clean all the bones from it after removing it from the can)


    Place Salmon into a large bowl and using a fork break it a part.


    NOTE: Save part of the water from the cans of Salmon in case you need additional liquid while making the patties.





    Crumble about a half package of Saltines (add more if needed) over the salmon. (I use my food processor for a fine powdered mixture) Add crackers to Salmon. (Some people use flour in making patties but I do not as flour burns and gets hard when fried in butter... I suggest using additional crackers if needed)





    Add a small amount of salt %26amp; pepper.





    Add one or two fresh eggs to bowl and mix all ingrediants together. Add more cracker crumbs if mixture is too moist.





    Take a small handful and form a ball, then pat out a patty (like a hamburger) but a bit flatter. Once you have made patties out of all of mixture it is usually best to place them in the refrigerator and get them cool before frying them.


    Fry them in a small amount of butter until they are slightly browned on both sides and serve them hot.





    I make a Cream Sauce and add Peas to the sauce to put over the fried patties. I also serve Steamed Rice with the patties rather then potatoes, and a fresh made salad complements the meal.
    Salmon Lasagna


    * 1 (8 ounce) package lasagna noodles


    * 3 cups heavy cream


    * 2 (10.75 ounce) cans condensed cream of mushroom soup


    * 1 cup grated Parmesan cheese


    * 1/4 cup butter


    * 1 tablespoon olive oil


    * 1/2 large onion, diced


    * 4 cloves garlic, sliced


    * 5 mushrooms, diced


    * 2 cans salmon


    * salt and ground black pepper to taste


    * 1 cup ricotta cheese


    * 1 bunch fresh spinach, rinsed


    * 3 cups shredded mozzarella cheese





    DIRECTIONS





    1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 8 to 10 minutes, or until al dente. Drain, and rinse with cold water.


    2. In a saucepan over low heat, mix together heavy cream, cream of mushroom soup, Parmesan cheese, and butter. Simmer, stirring frequently, until well blended.


    3. Heat the olive oil in a skillet over medium heat. Cook and stir the onion in olive oil until tender, then add garlic and mushrooms. Mix in the salmon, and cook until heated through. Season with salt and pepper.


    4. Lightly coat the bottom of a 9x13 inch baking dish with enough of the cream sauce mixture to coat. Layer with 1/3 of the lasagna noodles, 1/2 cup ricotta, 1/2 of the spinach, 1/2 the salmon mixture, and 1 cup mozzarella. Top with 1/2 the cream sauce mixture, and repeat the layers. Place the remaining noodles on top, and spread with remaining sauce.


    5. Bake 1 hour in the preheated oven, or until brown and bubbly. Top with the remaining mozzarella, and continue baking until cheese is melted and lightly browned.

    1 cup all-purpose flour


    1 cup grated parmesan cheese, divided


    1/2 teaspoon salt


    1/4 teaspoon paprika


    6 tablespoons extra-virgin olive oil


    1/2 cup milk


    3 eggs, beaten


    1 cup sour cream


    1/4 cup mayonnaise


    1 tablespoon finely chopped fresh chives


    1/4 teaspoon Tabasco sauce (to taste)


    1/4 teaspoon salt


    1/4 teaspoon pepper


    1 1/2-2 cups cooked salmon, flaked and all skin and bones removed (Canned is fine too)


    sour cream (to garnish)


    Preheat oven to 400 degrees.


    In a medium bowl, combine flour, 3/4 cup Parmesan cheese, salt, paprika, and olive oil.


    Press mixture onto bottom and sides of a 10-inch pie plate or quiche pan.


    Bake for 10 minutes; remove from oven and reduce oven temperature to 325 degrees.


    In a large bowl, combine milk, eggs, sour cream, mayonnaise, chives, Tabasco, salt, and pepper.


    Stir in flaked salmon and remaining 1/2 cup Parmesan cheese.


    Pour mixture into baked crust.


    Bake approximately 45 to 50 minutes or until a knife inserted in the center comes out clean.


    Remove from oven and let cool 12 to 15 minutes.

    here is the salmon recipe i make all the time. My daughters (5 and 20 months) love it. i use dijon honey mustard for the course mustard, so its not too spicey. also i usually double the marinade, and when its cooked i give the girls a bowl of the sauce to dip in. they love it.

    Any ideas/ recipes for a 3course meal for 2 with baked salmon?

    i need an easy meal just for two, i know i want baked salmon as a main course (also need a good recipe for that) but i do not know what else to serve with it. i sort of want something different and not just a plain veggie but still be simple to make. I also need a good appetizer idea that is simple to make. for dessert i was thinking one of those nice ones that are served in cocktail glasses or individual mini cakes.Any ideas/ recipes for a 3course meal for 2 with baked salmon?
    The easiest way to prepare salmon in my opinion is to top it with any seasoning you like, I use cajun seasoning, lemon pepper, fresh dill with roasted minced garlic, or just plain seasoning salt. Then I top each fillet with about 4 pats (thin slices) of butter.





    The butter helps the seasonings to absorb into the salmon and keeps the salmon moist.





    Then I bake it for 15 minutes on 375.





    For a side dish you could do roasted potatoes and roasted green beans. For the potatoes: Use 3 red potatoes, cut them into two inch cubes, toss them in lipton onion soup mix with 1 tbsp oil and shake them in a bag or bowl to coat. Put them on a baking fish and cook on 375 for 45 minutes. For the green beans, toss then in olive oil, with 1/4 tsp salt and black pepper to taste...you can also add minced garlic too. Bake those on 375 for 20 minutes.





    For the dessert, buy 1 pound cake, cut it into cubes. Make your favorite flavor of pudding and buy your fav cookies. Crush the cookies in a bag and set aside. Layer the glasses with cubes of pound cake, then 2 tbsp of pudding, then cookie crumbs and repeat. My fav is to layer with pound cake, then cheese cake flavored pudding, then thawed sliced frozen strawberries, then crushed oreos, and repeating this until the glass is full, then you can top with whipped cream or drizzle with chocolate sauce.





    Oh one more thing....for the salmon if you choose fresh dill with roasted garlic





    Cut the top off of the head of garlic, drizzle with oil. Microwave for 1 minute, flip over and do another minute more. Take the cloves out and mix them with 4 tbsp butter, 1/2 tsp fresh cut dill, and sometimes I add 1 tsp lemon juice, a few shreds of lemon rind that is grated, and 1/2 tsp salt. Mix it all together and spread it over the salmon before baking.

    Place salmon filets face side down in a baking dish (spray dish with pam first). Toss spinach leaves, sliced mushrooms and a chopped tomato in a little melted butter then spoon over fish. Bake at 375 for 26 mins or until fish is flaky. Wala - perfect dinner that includes veggies!

    On a sqare of parchment paper layer the ingredients in this order.





    Pat of butter


    Thinly sliced red potatoes


    Fresh spinach


    Chopped green onion


    Salmon filet

    Alaska Salmon Bake with Pecan Crunch Coating is a family favorite of mine.





    3 tablespoons Dijon mustard


    3 tablespoons butter, melted


    5 teaspoons honey


    1/2 cup fresh bread crumbs


    1/2 cup finely chopped pecans


    3 teaspoons chopped fresh parsley


    6 (4 ounce) fillets salmon


    salt and pepper to taste


    6 lemon wedges





    Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.


    Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.


    Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

    2 medium lemons


    1 1/2 cups sugar


    2 cups milk


    3 cups club soda, chilled


    2 drops yellow food coloring (optional)


    Additional sugar








    Remove ends from lemons and discard. Remove lemon peel with a knife; set aside. Quarter lemons; squeeze juice into a bowl. Remove and discard white membrane. Place the peel and pulp in a blender or food processor; cover and process until coarsely chopped. Add peel mixture and sugar to lemon juice; mix well. Let stand for 30 minutes.


    Stir in milk. Strain lemon mixture; add club soda and food coloring if desired. Serve immediately in sugar-rimmed glasses if desired.

    1 medium onion, chopped


    1 medium green pepper, chopped


    1 medium sweet red pepper, chopped


    1 garlic clove, minced


    1/2 teaspoon dried basil


    1/4 teaspoon pepper


    1 tablespoon tomato sauce


    1 (15 ounce) can black beans, rinsed and drained


    1 cup cooked long-grain rice


    1 tablespoon red wine vinegar


    1/4 cup shredded Cheddar cheese





    In a nonstick skillet that has been coated with nonstick cooking spray, saute the onion, green and red peppers, garlic, basil and pepper until tender. Stir in tomato sauce. Add beans, rice and vinegar; heat through. Transfer to a serving dish; sprinkle with cheese.





    Desert I serve with it is Mini Pineapple Upside-Down Cakes





    INGREDIENTS


    2/3 cup packed brown sugar


    1/3 cup butter, melted


    2 (20 ounce) cans sliced pineapple


    1 (18.25 ounce) package yellow cake mix


    3 eggs


    1/3 cup vegetable oil


    12 maraschino cherries, halved





    DIRECTIONS


    In a small bowl, combine the brown sugar and butter; mix well. Spoon into 24 greased muffin cups. Drain pineapple, reserving the juice. Trim pineapple to fit the muffin cups; place one ring in each cup.


    In a large mixing bowl, combine the cake mix, eggs, oils and 1-1/4 cups of the reserved pineapple juice; mix well. Spoon over pineapple, filling each cup two-thirds full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.


    Immediately invert onto wire racks to cool. Place a cherry in the center of each pineapple ring.

    Salmon Fishcakes





    English Recipe for Salmon fishcakes, I got from my Granny, my Grandpa brought this back from the war.








    1 1/2 to 2 cups left-over cold mashed potato


    15 Oz can of salmon


    1 tablespoon unsalted butter, melted


    fat pinch cayenne pepper


    grated zest of 1/2 lemon


    salt %26amp; pepper to taste


    1 egg





    Optional


    Add to the mixture





    Saut茅 (in butter) 1/4 cup total of finely chopped red onion


    and finely chopped sauteed, red bell pepper


    1 /8 teaspoon garlic powder


    1/4 teaspoon dried dill weed


    1/4 teaspoon celery salt








    Mix together all of above.





    Mould into approx. 7-9 patties, and put onto a baking lined with wax paper or Alum foil,


    and refrigerate for at least 20mins.





    2 eggs


    7 tablespoons matzo meal (or white bread crumbs)


    3 1/2 Tablespoons of unsalted butter


    2 tablespoons vegetable oil





    Beat eggs in shallow bowl and sprinkle matzo onto plate. One by one dip

    1/4 cup sliced green onions


    1/4 cup fat-free mayonnaise

    2 teaspoons Dijon mustard


    1/2 cup dry breadcrumbs


    1 tablespoon canola oil





    To prepare aioli, combine first 3 ingredients in a small bowl; set aside.

    2 Tbs. olive oil, plus more for oiling paper





    Salt and freshly ground pepper, to taste





    6 skinless salmon fillets, each about 6 oz. and


    of uniform shape


    Directions:





    Preheat an oven to 400掳F.





    In a small bowl, stir together the tomatoes, shallots, marjoram, lemon juice, the 2 Tbs. olive oil, salt and pepper.





    Rinse the fish and pat dry. Cut 6 sheets of parchment about 12 inches square. Fold each sheet in half, open like a book and brush the paper to one side of the crease with olive oil. Place a fillet on each oiled side. Spoon the tomato mixture over the fish, dividing it evenly.





    Fold the parchment paper over the fish. Tightly seal each package by folding the edges over several times and creasing firmly. Place the packages on 2 baking sheets.





    Bake until the salmon is opaque throughout, about 15 minutes. To check for doneness, open a package and pierce the fish with a knife.

    BAKED SALMON STEAKS





    3 salmon steaks (about 1/2 lb each)


    lemon juice


    Ritz crackers, crumbled


    garlic and onion powder


    3 pats butter (1 tablespoon each)


    salt and pepper, to taste


    1 tablespoon fresh parsley, minced





    Spray a shallow sided aluminum baking pan with olive oil spray. Place fish steaks on pan, each with a pat of butter on top. Sprinkle evenly with garlic and onion powder and a pinch each of salt and pepper. Crumble the crackers evenly your hands) over the top of the fish (using your hands). Sprinkle with minced parsley.


    Broil (on the top rack), without turning, until the edges of the fish are browned and the flesh is a whitish pink (no longer clear) and it starts to look flaky when touched with a fork. This will take about 10-15 minutes, depending on your oven and the size of the fish steak.





    Squeeze lemon juice over top before serving garnished with a sprig of fresh parsley and lemon wedges

    Wash fish. Sprinkle with salt. Place fish in a shallow baking dish. Combine water and wine; pour over fish. In a mixing bowl combine butter, lemon juice, dill, salt and pepper. Add stuffing and parsley; top fish with mixture. Bake, uncovered at 350 degrees for 35 minutes. Serves 4. Serve with Dill Sauce.

    1 tbsp. butter


    1 sm. onion, finely chopped


    3 c. zucchini, shredded


    1 c. carrot, shredded


    1/4 c. parsley, minced


    1-2 tbsp. fresh basil or tarragon, minced or 1/2-1 tsp. dried basil or tarragon


    4 salmon steaks (4 oz. each)


    1 tsp. fresh lime juice


    Salt %26amp; pepper to taste





    Preheat oven to 350 degrees. In a skillet over medium heat melt butter. Add onion. Saute until tender. Add zucchini, carrot, parsley and basil; mix lightly.


    Lightly grease a 10 x 10 inch baking dish. Place vegetable mixture in prepared dish. Coat salmon steaks with lime juice. Arrange over vegetable mixture; sprinkle with salt and pepper. Cover. Bake for 30 minutes. Uncover. Bake for 10 minutes longer or until fish flakes easily.





    Makes 4 servings.

    BAKED SALMON WITH CHEESE SAUCE





    6 filleted salmon steaks


    1 tbsp. lemon juice


    1 chopped onion


    1 tsp. salt


    1/2 tsp. pepper


    1/4 c. melted butter





    SAUCE:





    3 tbsp. butter


    3 tbsp. flour


    1 1/2 c. milk


    1 c. grated cheese





    Put fish in baking pan and cover with above ingredients. Bake at 375 degrees 35 to 40 minutes.


    Cheese sauce: In a skillet, melt 3 tablespoons butter. Add 3 tablespoons flour; mix until smooth. Add 1 1/2 cups milk and 1 cup grated cheese. Mix until thick. Pour cheese sauce over baked fish and brown under broiler 7 to 10 minutes.

    SALMON SOUR CREAM BAKE





    2 (8 oz.) fresh or frozen salmon steaks, 1 inch thick


    1/4 c. sour cream


    1/4 c. mayonnaise


    1/4 c. sliced green onion


    1 tsp. lemon juice


    1/4 tsp. salt


    Dash ground red pepper


    1/4 c. shredded cheddar cheese





    Thaw salmon, if frozen. Halve steaks lengthwise, perpendicular to cutting surface removing center bone. Place the 4 steaks in 10 x 6 x 2 inch baking dish. Bake uncovered, in 450 degree oven for 12 to 15 minutes, just until fish flakes. Meanwhile, blend sour cream, mayonnaise, green onion, lemon juice, salt and red pepper. Spoon over salmon. Sprinkle cheese on top. Bake 3 to 5 minutes more, until sauce is heated through. Makes 4 servings

    DIJON BAKED SALMON WITH MOUSSE TOPPING





    1/2 lb. filet of sole (or firm white fish), cut in 1 inch pieces


    1 egg


    1/4 c. heavy cream


    2 tbsp. Dijon mustard





    In blender or food processor, combine all ingredients. Blend until smooth. Set aside.





    4 salmon steaks, 1 inch thick


    3/4 c. dry white wine


    1 tbsp. chopped onion


    1/4 c. heavy cream


    2 tbsp. butter (or butter)


    2 tbsp. Grey Poupon Dijon Mustard





    Arrange salmon in shallow baking dish. Spoon mousse on salmon. Add wine. Bake in preheated 450 degree oven 20 minutes. Remove salmon to serving platter. Keep warm. Pour fish liquid into large skillet. Add onion, cream and butter. Boil, stirring until reduced by one half. Mix in mustard. Serve salmon with sauce. Serves 4.

    3 peppercorns


    1/4 lemon


    1 can (14 ounces) chicken broth


    1 pound salmon or other full-flavored fish fillets


    1/2 cup half-and-half


    1 teaspoon cornstarch


    1 teaspoon chopped fresh rosemary leaves or 1/4 teaspoon dried rosemary leaves


    1/2 teaspoon salt








    1. Place 1 teaspoon rosemary, the parsley, peppercorns and lemon in cheesecloth; tie securely.


    2. Heat broth and cheesecloth bag to boiling in 10-inch skillet; reduce heat. Cover and simmer 5 minutes.


    3. If fish fillets are large, cut into 4 serving pieces. Place fish fillets in skillet; add water, if necessary, to cover. Heat to boiling; reduce heat. Simmer uncovered 5 to 10 minutes or until fish flakes easily with fork.


    4. Remove fish to serving platter and keep warm. Reserve 1/3 cup broth mixture. Discard cheesecloth bag and remaining broth mixture.


    5. Mix half-and-half and cornstarch. Heat half-and-half mixture, reserved broth mixture, 1 teaspoon rosemary and the salt to boiling in skillet over medium heat. Boil and stir 1 minute. Pour over fish.
    I like my salmon as simple as possible, especially if it is a good piece. Pretty much all I put on is, sea salt, black peper, olive opil and lime. If it isn't the best piece of fish, them I might add some soy and ginger to it.





    I think it is best grilled, but pan frying in a cast iron skillet is great, becasue you can get the heat a lot higher than in a non-stick.
    Mix 1/2 cup heavy cream, 3 tbsp smooth dijon mustard, 2 tbsp grainy dijon mustard, salt pepper and 3 tsp fresh dill. In a baking dish place salmon fillets ot steaks and pour mixture over them. Bake at 350 for 30 minutes.
    I always put ranch, dried parm, dill, garlic, lemon juice, lemon pepper, and perhaps cumin on it while it bakes. It comes ou really well!!
    We like to take the salmon fillets and fry it fast in hot oil so it browns. Then drain off the oil and put soy sauce, brown sugar, and some garlic in the pan and cook it until it starts to thicken. Add the salmon, turning so it gets coated with the sauce, sprinkle chopped green onions over the top and serve with steamed rice and a salad. Delicious!

    To me it is abhorrent to do anything other than lightly salt Salmon, but a friend prepared this for me and I grudgingly have to admit ';it ain't too bad';.





    Ginger Glazed Salmon Steaks.


    Ginger Glaze:


    2 tablespoons grated fresh ginger


    2 tablespoons minced garlic


    2 tablespoons minced scallion, white part only


    2 tablespoons chopped cilantro


    1 tablespoon hot chili paste


    1/2 cup rice wine vinegar


    1/4 cup Mirin (Japanese rice wine) or dry sherry


    2 tablespoons hoisin sauce


    1/2 cup chicken stock


    1 tablespoon vegetable oil


    4 7-ounces salmon steaks


    Salt


    Fried basil leaves, for garnish


    Basil mashed potatoes


    Sesame asparagus





    Preheat oven to 450 degrees.


    Make glaze: In a small saucepan combine all ingredients and bring to a boil. Simmer 30 seconds and remove from heat. Cool to room temperature.





    Heat oil in a heavy-bottomed, ovenproof skillet until smoking. Season salmon with salt. Sear first sides until golden brown. Turn steaks and roast in oven for 3 minutes. Brush with Ginger Glaze. Roast for 1 minute more. Serve with potatoes and asparagus, garnished with basil leaves.

    DIRECTIONS


    Preheat an outdoor grill for high heat.


    Melt the butter in a saucepan over medium heat, and mix in the brown sugar, lemon juice, dill, and cayenne pepper. Cook and stir until the brown sugar is dissolved. Reduce heat and simmer until ready to brush onto the salmon.


    Season salmon with lemon pepper, and place directly on the grill grate, skin side down. Brushing frequently with the butter and brown sugar glaze, cook the salmon 20 minutes, or until easily flaked with a fork. Reserve some of the glaze for serving.



    I love salmon, and the best way to cook it is grilled. First season (to taste which means I do not use too much) with sea salt and freshly ground pepper. Sea salt is larger crystals, and I like to see that I do not put too much salt on my food.) Next put slices of sliced fresh lemon and white onion (Walla Walla are still in season and these are the very best) on each salmon piece or in the cavity of the whole salmon. I like to squeeze a little extra lemon juice on the flesh also. You could add Old Bay Seasoning which would give it a little more spice. I like it without this, as the flavor of the salmon really stands out with the punch of lemon. Wrap it in aluminum foil and put it on the grill. I do not turn the salmon, but I check it to see that the flesh is done. This really depends on how big your fish is and if you have filets, steaks or the whole fish.





    I watched Yan Can Cook and he made an interesting fish dish that I adapted to salmon I cooked the other night - tangy and unique. Make a marinade of soy sauce, sesame oil, minced garlic, ginger grated finely, a dash of sugar, and freshly ground pepper. Marinate the salmon in the marinade for at least an hour. Then put the salmon in a large piece of aluminum foil. Spoon the remaining marinade over the top of the salmon pieces. Seal the foil, making a packet and bake at 350 degrees until done. I got a little impatient and opened the packet up and let it bake some of the marinade off. My husband loved it!





    Hope these give you a few ideas.
    Take a whole salmon. Season it with lemon pepper. Add some lemon slices along the top side of the fish. You can use dill weed instead of the lemon pepper, if desired. Wrap the fish in aluminum foil, being careful to seal it completely. Take the wrapped fish, and wrap it again in heavy duty aluminum foil, making certain that it is securely wrapped.





    Place the foil-wrapped fish in the top rack of an empty dishwasher, and run it through two complete cycles, WITHOUT detergent or rinse aids.





    Remove the fish. Remove the outer foil, and carefully open the inside foil, and plate the fish.

    Alaska Salmon Bake





    INGREDIENTS


    3 tablespoons Dijon mustard


    3 tablespoons butter, melted


    5 teaspoons honey


    1/2 cup fresh bread crumbs


    1/2 cup finely chopped pecans


    3 teaspoons chopped fresh parsley


    6 (4 ounce) fillets salmon


    salt and pepper to taste


    6 lemon wedges








    DIRECTIONS


    Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.


    Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.


    Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.














    Balsamic-Glazed Salmon Fillets





    INGREDIENTS


    6 (5 ounce) salmon fillets


    4 cloves garlic, minced


    3 tablespoon white wine


    1 tablespoon honey


    1/3 cup balsamic vinegar


    4 teaspoons Dijon mustard


    salt and pepper to taste


    1 tablespoon chopped fresh oregano








    DIRECTIONS


    Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.


    Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.


    Arrange salmon fillets on foil-lined baking sheet. Brush fillets with balsamic glaze, and sprinkle with oregano.


    Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze, and season with salt and pepper. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the foil.














    Firecracker Grilled Salmon





    INGREDIENTS


    8 (4 ounce) fillets salmon


    1/2 cup peanut oil


    4 tablespoons soy sauce


    4 tablespoons balsamic vinegar


    4 tablespoons green onions, chopped


    3 teaspoons brown sugar


    6 cloves garlic, minced


    1 1/2 teaspoons ground ginger


    4 teaspoons crushed red pepper flakes


    1 teaspoon sesame oil


    1/2 teaspoon salt








    DIRECTIONS


    Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.


    Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.


    Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.











    Grilled Salmon with Curried Peach Sauce -Yummy!!!





    INGREDIENTS


    2 fresh peaches, peeled and diced


    1/3 cup honey


    2 teaspoon curry powder


    salt and pepper to taste


    2 salmon steaks








    DIRECTIONS


    Preheat an outdoor grill for medium-high heat, and lightly oil grate.


    Stir together the peaches, honey, and curry powder in a small saucepan over medium heat. Bring to a simmer, and cook until the peaches break down, and the sauce thickens, about 10 minutes. Season to taste with salt and pepper.


    Season the salmon steaks with salt and pepper, and cook on the preheated grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on the thickness of the steaks. Pour the peach sauce over the salmon to serve.














    Parmesan Crusted Salmon





    INGREDIENTS


    1/2 cup Parmesan cheese


    1 cup Italian seasoned bread crumbs


    1 teaspoon dried tarragon


    2 teaspoon dill weed


    1 cup white wine


    1/4 cup teriyaki sauce


    1 tablespoon melted butter


    1/4 cup chopped red onion


    2 tablespoon minced garlic


    2 pounds salmon steaks








    DIRECTIONS


    In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, tarragon and dill.


    In a medium saucepan over medium heat, blend white wine, teriyaki sauce, butter, red onion and garlic. Cook and stir until onions are tender.


    Press one side of each salmon steak into the Parmesan cheese mixture. Place steaks crust side up in saucepan with white wine mixture. Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.



    SALMON TERIYAKI MARINADE





    1/2 c. soy sauce


    1/2 c. water


    1 tbsp. oil


    2 tbsp. vinegar (malt)


    1 tbsp. brown sugar


    2 cloves garlic, chopped


    1 tbsp. Worcestershire sauce





    Marinate at least 4 hours. Bake 45 minutes at 350 degrees or grill.


    if you don't like this recipe, my favorite quick salmon is a bottle of teryaki over the top of the salmon. put it in the oven for the same amount of time, 5 minutes before it's done, sprinkle some black sesame seeds on top
