What's your salmon recipe?

I would like to do different things with canned salmon. I love it and so does my family but I want to try something different.

Do you also know some good side dishes as well. I've tried mashed potatoes and rice as well.

We are on a strict budget this month. What's your salmon recipe?

I like salmon patties best..

1 can drained salmon

1/4 cup chopped onion

1/2 cup chopped green bell pepper

8 saltines crushed

1/4 tsp of red pepper flakes (optional)

1 large egg or two small

salt and black pepper

3 tbs of olive oil

mix and make into 4 patties place into heated olive oil in skillet..cook on med heat till lightly browned on both sides..I eat mine with collard greens , turnip greens or spinach..
I make salmon pattys. I mix salmon (after getting bones out of it %26amp; other yuckys) with diced onion, cracker crumbs,1 egg, parsley flakes. Form into pattys %26amp; fry till golden brown. This is quick %26amp; only takes a few minutes. I'm making this tomorrow with raw potato pancakes. They just seem to go together. Here's how to make the potato pancakes. Grind potatoes, add 1 egg, chopped onion salt %26amp; pepper, flour %26amp; milk. Mix together %26amp; fry till golden brown. I add some flour to the potatoes 1st to absorb the liquid; then add the rest. I use about 8-10 potatoes (medium size) %26amp; a medium onion. Add enough flour to absorb the liquid %26amp; then add enough milk to make it the consistency of pancake batter. These are so good. Just put butter on them %26amp; enjoy!
