Foil-Poached Salmon
Ingredients :
3 lb Whole or half salmon
1 cup Water
1/4 cup Lemon juice
1/2 cup Chopped onion
1/2 tsp Basil
1/4 tsp Rosemary
1/4 tsp Tarragon
2 x Lemon slices
1/2 tsp Salt, optional
Lemon or cucumber slices for garnish
Parsley sprigs or fresh dill for garnish
Heavy-duty aluminum foil
Method :
California Kosher Cookbook, Serves 6 to 8 (Pareve)
1. In a medium saucepan, combine all ingredients except salmon and simmer gently for 20 minutes.
2. Wash salmon.
3. Place heavy-duty aluminum foil on a sturdy cookie sheet or in a large pan (use enough foil to wrap fish and poaching liquid). Bring up edges of foil; pour poaching liquid over salmon. Crimp the foil to seal tightly.
4. Bake at 375 degrees for 9 - 10 minutes per pound of salmon, for a minimum of 30 minutes. Remove from oven; allow to stand 5 minutes before opening foil.
5. Remove skin, transfer to serving plates or platter and decorate with lemon or cucumber slices, parsley or dill, as desired.
6. May be served hot or chilledI need a poached salmon recipe, nothing hard, and not using wine.?
Use any recipy, but replace the wine with chicken or veggie broth. it will turn out great!
Salmon Patties I
INGREDIENTS:
* 1 (14.75 ounce) can canned salmon
* 1 egg
* 1/2 cup seasoned dry bread crumbs
* 1/4 cup chopped onion
* 1 tablespoon olive oil
DIRECTIONS:
1. Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
2. Make into patty's. If mixture is too dry to form into patties, add reserved liquid from salmon.
3. In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.
Salmon Patties II
INGREDIENTS:
* 1 (14.75 ounce) can canned salmon
* 1 egg
* 1/2 cup self-rising flour
* 1 quart vegetable oil for frying
DIRECTIONS:
1. In a medium bowl, combine salmon, egg, and flour; mix well. Form into patties.
2. Heat approximately 1/4 inch oil in a fry pan over medium-high heat. Fry patties in batches until browned, turning once. Drain on paper towels, and serve.
Salmon with Lemon and Dill
INGREDIENTS:
* 1 pound salmon fillets
* 1/4 cup butter, melted
* 5 tablespoons lemon juice
* 1 tablespoon dried dill weed
* 1/4 teaspoon garlic powder
* sea salt to taste
* freshly ground black pepper to taste
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
2. Place salmon in the baking dish. Mix the butter and lemon juice in a small bowl, and drizzle over the salmon. Season with dill, garlic powder, sea salt, and pepper.
3. Bake 25 minutes in the preheated oven, or until salmon is easily flaked with a fork.
