Recipes for leftover smoked salmon?

We gave a party and have quite a bit of smoked salmon left over from the platter we served. We've made sandwiches and put it in salads, but we're running out of ideas. It's still good and it was expensive so I hate to throw it out. Any ideas?Recipes for leftover smoked salmon?
Here are some ideas you might enjoy:





1. Smoked salmon, cream cheese, capers, chopped red onion, on toasted bagels or toast.


2. Smoked salmon patties: chop salmon and mix with a little mayonaise, chopped green onion, and crushed Ritz crackers. Form into patties and saute until golden brown on both sides.


3. Smoked salmon and corn chowder: Mix together 1 can cream of potato soup and 1 can creamed corn with 1 1/2 cups half and half in stockpan. Saute 1/2 yellow onion with 5 slices platter bacon, chopped. Drain and add to soup mixture. Add chopped smoked salmon and 1/2 cup sour cream and 1 1/2 T chopped fresh dill. Heat and serve.


4. Smoked salmon bruschetta: Flatten pizza dough into a large oiled cookie sheet. Brush with olive oil mixed with chopped red onion and chopped capers. Sprinkle with goat cheese and smoked salmon. Sprinkle with fresh ground pepper and kosher salt. Bake until puffed and cheese is melted.Recipes for leftover smoked salmon?
Fusilli with Smoked Salmon





2 tablespoons butter


2 tablespoons olive oil


2 vitalia sweet onion -- chopped


4 tablespoons cognac


1 cup heavy cream


8 ounces smoked salmon chopped


1 cup chives


12 ounces fusilli pasta


capers optional





Melt butter with olive oil in a large pan. Saute onions 8 to 10 minutes until translucent in partially covered pan. Add cognac and cook on low 10 to 15 minutes. Add cream and cook on low 10 minutes. Add smoked salmon and chives. cook on low 5 minutes; set aside. Boil pasta until al dente. Add pasta to sauce. Serve pasta with sprinkles of capers( optional) and chives

Smoked Salmon Canapes





1/2 (8 Oz.) Pkg. Neufchatel


Cheese Softened 1/2 ts Grated Lime Rind


1/4 ts Onion Powder


1 1/2 lb Jicama, Unpeeled


1/2 ts Worcestershire Sauce


1 tb Ground Black Pepper


2 oz Smoked Salmon Cut Into


36 Thin Strips.


3 Lime Wedges





Combine Cheese, Lime Rind, Onion Powder %26amp; Worcestershire Sauce in A Small Mixing Bowl; Beat At Medium Speed Of An Electric Mixture Untilsmooth. Set Aside. Cut Jicama Into 1/4 in. Thick Slices; Cut Slices Into 18 (2 Inch) Sqares. Cut Each Square in Half Diagonally To Make 36 Triangles. Discard Remaining Jicama. Rub The Longest Side Of Each Triangle With A Lime Wedge. Dip Side Of Triangle in Pepper. Repeat Procedure With Remaining Triangles. Pipe OR Spoon Aobut 1 t. Cheese Mixture Onto Each Triangle. Top With A Salmon Strip.

Smoked Salmon dip. Mix it with cream cheese and thinly chopped scallions.
It's good in pasta salad, or hot pasta dishes with cream sauce and peas.
