Quick and easy recipe for salmon cakes?

hi, i'm having a fews friends over to watch the race sunday and i want to make crab cakes and salmon cakes(patties). i know a good recipe for crab cakes, but i have no idea how to make salmon cakes. anyone?Quick and easy recipe for salmon cakes?
Super Easy Salmon Cakes





INGREDIENTS:


1 (7 ounce) can salmon, drained and flaked


1 egg, beaten


1 tablespoon olive oil


2 green onions, finely chopped


2 cups finely crushed saltine cracker crumbs


lemon pepper to taste

DIRECTIONS:


Preheat oven to 375 degrees F (190 degrees C).


In a medium bowl, mix together salmon, egg, olive oil, green onions, and 2/3 cup cracker crumbs. Season with lemon pepper. Form mixture into 8 patties. Coat patties with remaining cracker crumbs, and arrange in a single layer on a baking sheet.


Bake 10 minutes in the preheated oven, turning once, or until golden brown on both sides.

Cook Time:10 Minutes


Ready In:25 Minutes

Here's a good old recipe from my granny......


Can of salmon NOT DRAINED


Mashed potatoes ( do not use any liquid, just salt ,pepper and butter , as the juice of the salmon will give extra flavor to your patties but you don't want them too runny)


Green onions or regular onions finely chopped, a bit of garlic salt.


Mix together, form into patties, roll them in flour.Melt butter in a hot frying pan and fry until golden.

They are all about the same. Some oil, and egg, a chopped onion and crushed crackers until the rightconsistency-moist but not too wet and holds together when pressed into a patty.
