Easy recipe for canned salmon or albacore?

Does anyone know a good dinner recipe for canned salmon or albacore? I'm a college student and my resources are very low.Easy recipe for canned salmon or albacore?
ALASKA SALMON AND BROCCOLI-CHEESE PASTA





20 Minute Meal


2 packages (4.8 oz. each) pasta with four-cheese sauce


1/2 cup fat-free milk


1 package (10 oz.) frozen chopped broccoli


1 can (14.75 oz.) or 2 cans (7.5 oz. each) traditional pack Alaska salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked


1 teaspoon lemon pepper seasoning





In large saucepan, prepare packaged pasta according to low-fat directions, stirring in an additional 1/2 cup milk. Microwave broccoli on HIGH for 3 minutes, rotating occasionally and pulling apart to thaw. During the last 3 minutes of pasta cook time, blend in broccoli, salmon, and lemon pepper seasoning, heat through.

Salmon Croquettes:


1 can salmon, deboned and skin removed


2 tbsp. grated onion


1 cup saltine cracker crumbs


1 egg


salt and pepper to taste


Oil for frying





Heat enough oil in a dutch oven or skillet to cover your croquettes while you are mixing them. Place saltines in bag and seal and then crush. Or simply crush them by hand. Take salmon, cracker crumbs, onion, egg, and salt and pepper and mix well. Shape into patties or other shapes and drop into hot oil and fry until desired color. The lighter the color of the patties when you remove them from the oil the softer the croquettes will be, the darker the patties the crispier they will be. Usually they need to cook in the hot oil for at least 5 minutes. They are good served with tartar sauce or ketchup and fries or other sides. I like mine with macaroni and cheese (box kind is fine).
I made this last night - very good. We're only 3 so I halved teh recipe.





Salmon risotto serves 6


1 tab reduced calorie margarine (or 2 tsp oil)


1 medium onion, chopped


1 cup long-grain rice


3 packets bouillon dissolved in


3 cups hot water


2 cans drained salmon


4 ½ ounces cheddar cheese





In large saucepan, saute onion till golden add rice and stir. Stir in rice ; cook, stirring constantly 1 minute. Gradually stir in broth;cook;covered on low for 20 minutes or until rice is cooked. Stir in salmon and cheese. Cook to heat through and melt cheese.





Serve with Asparagus.


and cucumber dill salad:


Dice and seed ½ cucumber per person. Mix with plain yogurt, dill and salt to taste.
Tuna Melt Wraps








Ingredients:


(4) Mission® Low Carb Soft Taco Size Flour Tortillas


1 (7 oz.) pouch or 2 (3 oz.) pouches of StarKist Flavor Fresh Pouch® Tuna (Chunk Light or Albacore)


1/2 cup diced celery


2 Tbsp. of sweet green pickle relish


1/2 cup or 4 oz. of light mayonnaise


1 tsp. of lemon juice


1 cup of sharp Cheddar cheese (shredded)








Directions:


If broiling, pre-heat oven on broil to 350°F. In a bowl, combine the tuna, celery, pickle relish, light mayonnaise and lemon juice, mixing well to create the “tuna melt” mix. Down the center of each tortilla, place an equal portion of the tuna mix and top each with 1/4 cup of Cheddar cheese. Place each prepared tortilla on a broiler pan and place under the broiler (for microwaves, use a microwave-safe plate) and cook until the cheese begins to bubble (approximately 11/2 -2 minutes). Once each tuna melt is cooked, fold the long end of the tortilla over ingredients and roll tightly and transfer them to individual plates.

You can use drained canned albacore in place of the packets
