What's a good recipe for Salmon Croquettes or Fish Cakes in general?

Salmon Patties





INGREDIENTS:


1 can (16 ounces) salmon


1 small onion, finely grated


2 tablespoons minced fresh parsley


ground black pepper, to taste


2 large eggs, well beaten


1 to 1 1/2 cups fine dry bread crumbs


3 tablespoons butter


PREPARATION:


Turn salmon and liquid into a medium mixing bowl. Flake with a fork, removing OR mashing any bones (they are edible). Mix in grated onion, parsley and pepper. Mix beaten eggs with salmon. Add enough bread crumbs, about 1/2 to 3/4 cup, to make thick enough to shape into 12 small patties.


Roll patties in 1/2 cup bread crumbs. In a large heavy skillet over low heat, melt 2 tablespoons of butter; add patties. Fry patties slowly on one side; add remaining butter, turn patties and fry until brown on the other side.

Oven Salmon Cakes





Ingredients





1 1/4 c Ritz crackers, crushed coars


1 Egg, slightly beaten


2 tb Parsley, snipped


2 tb Green onion, sliced


2 tb Milk


1/8 ts Pepper


1/8 ts Worcestershire sauce


16 oz Salmon, drained and flaked


1 c Sharp cheese, shredded


1 tb Butter





Instructions





Combine 3/4 cup cracker crumbs, egg, parsley, onion, milk, pepper and worcestershire sauce. Add salmon and cheese; mix. Shape into 4 patties. Mix butter with remaining crumbs and coat patties with mixture. Place on ungreased baking sheet. Bake at 400 degrees for 10 minutes. For 10 salmon cakes





2 cans of salmon (some brands are boneless, which i use - no need to pick through it)


4 chopped scallions


10 saltine crackers, crushed into small crumbs


1 egg (I like them dense)


salt and lots of black pepper





Mash up all the ingredients and make into small patties (mine are approx. 2 Tbs. of salmon mixture. Fry up with vegetable oil until golden brown (approx. 5 mins. each side). I serve mine with garlic mayonnaise (3-4 finely minced garlic and mix with 1 cup of mayonnaise). Always a hit and oh so easy!
My Mom usually used canned salmon, added 2 eggs and enough crushed Ritz crackers to make it firm then divided it up and made patties out of it and fried them in butter flavored Crisco til golden brown. She served it with cocktail sauce and/or lemon butter depending on a persons preference. I don't care for fish but you might like it if you do. She always got rave reviews from others.
Fish Cakes





350g (12oz) Mashed Potatoes


275g (10oz) Haddock or Salmon


600ml (1 pint) Milk


15g (陆 oz) Butter


1 Onion


1 Egg


1 tbsp Capers


1 tbsp Fresh Parsley


50g (2oz) Flour


Wholemeal Breadcrumbs


Salt %26amp; Black Pepper





Poach the fish in the milk for 5-7 minutes until tender.Remove the skin and any bones from the fish, then flake.Fry the finely chopped onion in butter until transparent.Combine the fish, mashed potato, onion, chopped parsley and capers, ensuring that the fish remains in flakes, season well.Shape into cakes and dip in beaten egg, then into well season flour, then back into the egg and coat with breadcrumbs.Grill gently for 5 minutes on each side until browned.





Salmon Croquette








Ingredients for Balls:


1 can salmon, drained, without bones or skin


1 egg


2/3 cup saltine cracker crumbs, finely ground


1/2 teaspoon baking powder


2 teaspoons lemon juice


1/4 teaspoon salt


1 Tablespoon parsley flakes


Ingredients for Coating:


2 eggs


1/2 cup milk


1 cup (or more) finely ground saltine cracker crumbs





Mix first seven ingredients thoroughly and shape into balls. Roll each ball in a mixture of eggs and milk. Roll in ground crackers until thoroughly coated. Drop in hot oil and cook until lightly brown. Remove and drain. Serve warm or cold.
heat about 1 inch oil oil in a frying pan


drain a can of salmon


pick out all the spiny bones


in a bowl mix the salmon , salt, pepper, crushed Saltine crackers with a cracked egg


mix well with your hands and form into patties


carefully place into heated pan and fry until golden brown, turn and brown on the other side


when done, let drain on paper towels


and serve


1 can of Salmon makes about 5 patties





I always serve with mac/and cheese
my specialty:


1 can of salmon


1/2 onion, diced


1 egg


3 tbsp flour


1 tsp black pepper





warm grease in a pan, while preparing the ingredients, mix all ingredients,then form patties with your hands, place in warm grease, when bottom is slightly brown, flip patty over to brown the other side. eat with mustard and bread or rice. VERY DELICIOUS!!!!
