Do you have a wonderful salmon cake recipe?

I love salmon, I usually use an egg, and dill.....and cracker crumbs...make patty's and fry in pam....................鈾?br>

I make salmon and tuna patties the same way. Using leftover whole wheat bread, grind it in the food processor for the bread crumbs.





Salmon or Tuna Patty


can of tuna, well drained (I use Albertson's brand, its flaky, not mushy like Starkist tuna)


1 tablespoon dill pickle relish


1 teaspoon dijon mustard


1 egg or 1/4 cup egg beater


1/4 cup whole wheat bread crumbs (maybe a little more)


a couple shakes of garlic powder





1/2 cup bread crumbs for coating tuna patty





Mix ingredients except for 1/2 cup bread crumbs.





Preheat (medium heat) small skillet with canola oil, 1-2 tablespoon(s)





Use a pie plate with the bread crumbs, coat tuna mixture, (top, bottom, and sides) with bread crumbs, gently pick it up and place in skillet.





Let brown on one side before flipping it and then brown the other side.





Can have as a sandwich:


Add thinly sliced red onion, tomatoes, and romaine lettuce. Spread dijon mustard on the top slice of bread before putting it on the sandwich.


OR


have with vegetables such as steamed baby carrots or broccoli.
Just a variation like bread crumbs and using cream etc





NGREDIENTS:


6 tablespoons butter


5 tablespoons flour


3/4 teaspoons salt


1/8 teaspoon pepper


1 cup milk or cream


1 can (16 ounces) salmon, drained and flaked


1 tablespoon lemon juice


1 tablespoon finely minced or grated onion


1 tablespoon finely chopped fresh parsley


fine dry bread crumbs


1 egg, slightly beaten with 1 tablespoon water





PREPARATION:


Melt butter over medium-low heat in saucepan. Stir in flour, salt and pepper. Stirring, add milk gradually. Continue to cook, stirring constantly, until smooth and thickened. Remove from heat. Add salmon, lemon juice, onion, and parsley; blend well.





Chill salmon mixture until thick. Shape into patties about 2 1/2 to 3 inches in diameter. Dip patties bread crumbs, then dip in beaten egg, then coat with crumbs again. Fry in about 1 1/2 inches of hot oil at 375掳 until nicely browned on both sides. Drain on paper towels.
tiny diced onion and green pepper. i use extra virgin olive oil.


i sometimes use bread crumbs. following sylvia's soul food cookbook, i use the 'juice' from the canned salmon and let it be absorbed by the cracker crumbs/bread crumbs before i add the salmon. fresh ground pepper.
