Doe,s anybody know the recipe for salmon pies?

COUNTRY SALMON PIE





2 deep dish pie crusts


1 can (15 oz.) salmon


1 onion, diced


4 oz. fresh mushrooms


1 clove garlic, crushed


2 tbsp. butter


1 (16 oz.) carton sour cream


4 eggs


1 1/2 c. shredded Swiss cheese


1 tsp. dill weed


1/4 tsp. salt





Drain salmon. Saute onion, mushrooms and garlic in butter until soft. Beat sour cream and eggs until blended. Break salmon into bite size pieces and stir into sour cream mixture along with onion mixture, 1 cup cheese, dill weed and salt. Pour into pie crusts and top with remaining 1/2 cup cheese. Bake in 375 degree oven 60 to 70 minutes.Doe,s anybody know the recipe for salmon pies?
You can make a mixture just like you do salmon patties. Chopped onions, green and red peppers, italian bread crumbs, eggs (beaten) and grated cheese. You can even add vegetables to it if you like, just make sure they are in bite size pieces. Mix well.





Put this mixture in a pre-baked pie shell and then bake @ 350 for 30-45 minutes.

I don't know if this is what you're looking for, but this is my recipe! We call the Salmon Balls, (or Patties)


Use 1 can of Salmon,(deboned, drain liquid, but save 4 later)


Cut up 1 med. to lg. onion


After you have separated the Salmon add 1/2 cup S.R. Flour %26amp; 1 1/2 to 2 cups of corn meal


1 egg


1/4 teas. baking soda


1/4 teas. salt


the onion


Salmon %26amp; drained liquid


enough water to the consistency so it's thin enough to dip, but not so thin that it spreads out in the pan when you put it in the frying pan. mix all ingredients together. fill a 10 in. or larger frying pan about half full %26amp; heat to frying temperature.


Dip by Tablespoon fulls till you have enough in the pan so there's room to turn them over easily, ( 4 or 5 in a 10 in skillet). ( I've also used a deep fryer %26amp; they came out looking more like their name, Salmon Balls!) Brown well on both sides making sure it's cooked through %26amp; through. Put them on a plate covered with paper towels to absorb excess grease.

INGREDIENTS





* 2 (9 inch) unbaked pie crusts


* 2/3 cup white rice


* 1 1/3 cups water


* 2 onions, thinly sliced


* 1/4 pound fresh mushrooms, sliced


* 1 tablespoon butter


* 1 (10.75 ounce) can condensed cream of mushroom soup


* 2 (6 ounce) cans salmon, drained and mashed


* 2/3 cup shredded Cheddar cheese





DIRECTIONS





1. In a medium saucepan cook the rice with the water.





2. Preheat oven to 450 degrees F (225 degrees C).





3. Line a pie plate with pastry and set aside.





4. In a large saucepan over medium heat, saute the onions and mushrooms in the butter until soft.





5. Combine the cooked rice with the mushroom soup and spread half of the mixture over the bottom of the pie shell. Spread the mashed salmon over the rice mixture. Top with the sauteed mushroom/onion mixture and then top with the remaining rice mixture. Sprinkle with grated cheese and cover with pastry. Seal edges and pierce top.





6. Bake at 450 degrees F (225 degrees C) for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue to bake for another 30 to 35 minutes.
