Salmon filet recipes?

How do I cook fresh salmon filets. I have never cooked them before and need something easy to start with.

I pan sear. I season with a little salt, pepper and italian seasoning mix. Sear over medium high heat for approximately 3 minutes per side. If they are real thick filets then cook 4 or 5 minutes per side. I like to eat salmon when it is still opaque in the middle. After cooking, turn heat off and remove salmon, tent with foil. I like to add a tablespoon of butter, fresh squeezed lemon juice and 1/4 cup of a dry white wine, let simmer a few minutes and pour over the salmon.Salmon filet recipes?
Asian Salmon --








INGREDIENTS


2 pounds salmon filets, with skin


2 tablespoons olive oil


2 tablespoons rice vinegar


2 tablespoons soy sauce


1 tablespoon packed brown sugar


2 cloves garlic, minced


1 pinch ground black pepper


2 tablespoons minced onion


1 tablespoon sesame oil


2 cups long-grain white rice


1 teaspoon dried dill weed


4 cups water








DIRECTIONS


Make several shallow slashes in the skinless side of the salmon filets.





Place filets skin-side down in a glass baking dish. In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, brown sugar, garlic, pepper, onion and sesame oil. Pour the liquid over the salmon, cover and refrigerate for 1 to 2 hours.





Preheat the oven to 350 degrees F (175 degrees C). In a medium saucepan combine the rice, water and dill weed. Bring to a boil, then cook over medium low heat until rice is tender and water has been absorbed, about 20 minutes.





Remove cover from salmon, and bake in the marinating dish for about 30 minutes, or until fish can be flaked with a fork. Serve salmon over the rice, and pour sauce over.

Sweet 'n' Hot Glazed Salmon --








INGREDIENTS


1 1/2 cups apricot nectar


1/3 cup chopped dried apricots


2 tablespoons honey


2 tablespoons reduced sodium soy sauce


1 tablespoon grated fresh ginger


2 cloves garlic, minced


1/8 teaspoon cayenne pepper


1/4 teaspoon ground cinnamon


1 (3/4 pound) salmon filet without skin








DIRECTIONS


Preheat your oven's broiler, and grease a broiling pan.





In a saucepan over medium heat, mix together the apricot nectar, dried apricots, honey, soy sauce, ginger, garlic, cinnamon and cayenne. Bring to a boil, then reduce heat to medium-low, and simmer for about 20 minutes, or until reduced by about half. Stir occasionally to prevent burning. Remove 1/4 cup of the glaze for basting, and set the remaining aside.





Place the salmon filet on the greased broiling pan, and brush with glaze. Broil 3 inches from the heat for 8 to 12 minutes, or until salmon flakes easily with a fork. Gently turn over once during cooking, and baste frequently during the last 4 minutes. Serve with remaining glaze.

Grilled Salmon Skewers --








INGREDIENTS


1 pound salmon filet without skin


1/4 cup soy sauce


1/4 cup honey


1 tablespoon rice vinegar


1 teaspoon minced fresh ginger root


1 clove fresh garlic, minced


pinch of freshly ground black pepper


12 fresh lemon wedges


12 skewers








DIRECTIONS


Slice salmon lengthwise into 12 long strips, and thread each onto a soaked wooden skewer. Place in a shallow dish.





In a bowl, whisk together the soy sauce, honey, vinegar, ginger, garlic, and pepper. Pour over skewers, turning to coat. Let stand at room temperature for 30 minutes. When finished marinating, transfer marinade to a small saucepan, and simmer for several minutes.


Preheat an outdoor grill for medium-high heat.





Lightly oil grill grate. Thread 1 lemon wedge onto the end of each skewer. Cook skewers on the preheated grill for 4 minutes per side, brushing often with marinade, or until fish flakes easily with a fork.

Savory Baked Salmon Fillets with Spinach





About 12 large spinach leaves


4 salmon fillets


1 tablespoon fresh dill, chopped


salt %26amp; pepper to taste


1 cup cold water


1 1/2 teaspoons butter or margarine, melted


2/3 cup green onions, sliced


1 clove garlic, minced





Preheat oven to 325潞F.





Arrange spinach leaves on the bottom of a 13';x9'; baking dish. Lay salmon on top. Sprinkle salmon with dill, salt and pepper. Mix water and butter or margarine together and pour it over the salmon. Top with green onions and garlic. Cover the baking dish tightly with foil.





Bake for 25 to 30 minutes, or until salmon flakes easily when tested with a fork, basting two or three times. Serve with the spinach and juices.

Here is an easy poached salmon recipe:





Poached Salmon





4 to 6 - 6oz salmon fillets, skinless


Poaching liquid (or Court Bouillon):


1 medium onion, sliced


1 large carrot, sliced


1 lemon, sliced





Add the onion, carrots and lemon slices to a pot of boiling water. Reduce the heat and simmer for 5 minutes. Gently add the fillets. Cook fillets for 7 or 8 minutes.





Serve.
This is fast and easy. I line a pyrex pie plate with foil, spray with a light coating of non stick spray ... then after baking and serving, clean up is easy. Check salmon after 15 minutes ... I have found that it rarely takes the entire cooking time.





Salmon with Lemon and Dill


1 pound salmon fillets


录 cup butter, melted


5 tablespoons lemon juice


1 tablespoon dried dill weed


录 teaspoon garlic powder


sea salt or kosher salt to taste


freshly ground black pepper to taste





Preheat oven to 350 degrees. Spray a medium baking dish with non stick spray.





Place salmon in dish. Mix butter and lemon juice, drizzle over salmon. Sprinkle with seasonings.





Bake 25 minutes, or until salmon easily flakes with a fork.
Rinse your Filet under some TAP Water..


Useing a Hot Saute' Pan..useing butter or olive oil..


..add the fish and fry--each side..5-minutes..

I prefer them poached in plain water and finding a sauce to run across the top(once cooked)..

You could dice your Fresh Salmon--and coat with bread crumb--making a deep fry/

Fish Burger--


Place the salmon filet in a food processor--


..add bread crumb and some olive oil..spices..and a single egg/


..run that to just MIX%26amp;CHOP..keep it course..


..now you have some salmon pate' for forming a burger..


..useing a large plate--place drops of water on the plate surface..


..drop some of the fish pate' on the wet dish and form your burger..


..fry that in butter ..flipping once/


..Use a Big Toasted BUN--adding a mayonaise or dijon mustard--


..or tomato slice or even a portabella mushroom..
