Can anyone tell me good (and easy!) sweet and sour salmon recipe?

Sweet and Sour Salmon





1 salmon fillet (around a pound)


1 onion, sliced


1 sweet pepper


1/2 lb mushrooms, sliced


2 tablespoons butter


1 (20 ounce) can pineapple chunks


1/2 cup sugar


2 tablespoons cornstarch


1/2 teaspoon dry mustard


1/2 cup white vinegar


1 tablespoon soy sauce


1 (14 1/2 ounce) can stewed tomatoes





Pull bones out of salmon with pliers and cut into chunks, then poach in water.


Saute onion, pepper and mushrooms in butter until tender.


Add tomatoes and cooked salmon.


Drain pineapple, reserve syrup.


Combine sugar, cornstarch and mustard. Stir in with the pineapple syrup, vinegar and soy sauce. Add to onion mixture. Cook, stirring constantly until thick and clear. If needed, may be thinned with water.

I always just season mine and throw them on the grill. Mix a little olive oil, lemon juice, garlic, salt, and pepper and brush on the fillets. Grill them up until done. If you want, make a glaze to go on top. You can mix soy sauce with garlic and honey and cook down to reduce it to a glaze. Very easy, and very yummy. Oh, sorry, and to thaw it, just put it in cool water for a little bit.What is your best fresh salmon recipe?? (low fat please)?
You could put them in parchment paper and cook them with veggies and a little bit of olive oil and lemon juice.





I would also season it with some salt and pepper.

What You Need:








2 cloves garlic, minced


6 tablespoons light olive oil


1 teaspoon dried basil


1 teaspoon salt


1 teaspoon ground black pepper


1 tablespoon lemon juice


1 tablespoon fresh parsley, chopped


2 (6 ounce) Wild Salmon Dinner Fillets





Preparation:





1.In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.


2.Preheat oven to 375 degrees F (190 degrees C).


3.Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.
i sprinkle it with salt, pepper, pinch of freshly grated lemon zest, toasted black and white sesame seeds, and i put thinly sliced ginger root slices on top, and i foil up a pan, and cover the fish with foil. i bake at 300 for 30 mins so it doesnt get tough. in the last few mins, if i feel like i want some sauce on it, i melt a teaspoon of smart butter/margarine and i reduce 1/2 cup of some white wine, then i add my lemon juice from the zested lemon i used earlier. it will pretty much WOW anyone. the key to making it good...the fresh lemon %26amp; fresh ginger.
Sounds weird but is the best salmon I have had. I brush teriyake sauce on the salmon then dip in bread crumbs and add a little more sauce. I either grill them or put a light coat of olive oil in the pan and fry them. I make some rice and yummy a great healthy dinner!
One way I do it is sprinkling it with garlic pepper and grilling it on the BBQ. Another way I do it is to poach it. I put it on a wire rack in a covered pan and add a little water. Then I steam it until I start smelling it and then it's done. This method makes it very moist. I serve it with a wedge of fresh lemon to squeeze over it as I am eating it.
i put frozen salmon pices in a pan with a tight lid. before covering i sprinkle soy sause seseme seed oil ground pepper and ground ginger on it. Just a little water cover tightly and cook low for about 20 min

There are only so many ways to cook, fry and bake salmon before they are just SALMON. Anyone have any great ideas or unique recipes?Different Recipes for Salmon??
GRILLED SALMON WITH VINIAGRETTE AND ASPARAGUS








Ingredients:





4 eight- to ten-ounce pieces of fresh salmon fillets, skinless


1/2 cup canola oil


McCormick's Season All


1 lb. fresh asparagus spears, medium size


Sun-dried tomato basil vinaigrette (recipe below)


4 portions of your favorite savory rice recipe (Red Lobster suggests a wild/white rice blend)





Preparation:





Grilled Salmon





1. Lightly brush both sides of fillets with oil and season with McCormick's Season All.


2. Pre-heat grill to medium-high heat and grill fish for 4-5 minutes until well marked.


3. Turn fish over and continue grilling another 5-6 minutes or until your fresh fish preference is reached.





Grilled Asparagus





1. Measuring from the tip, cut stems off about 5'; down. Discard stems.


2. Toss asparagus in 3 tbsp. oil; add salt and pepper to taste.


3. Grill asparagus for about 1 minute, then roll and grill another minute or until tender.





Sun-Dried Tomato Basil Vinaigrette (Yield: 8 ounces)





Ingredients:





6 ounces canola oil


2 ounces red wine vinegar


2 ounces sun-dried tomatoes in oil, finely chopped


陆 cup chopped fresh basil


2 tbsp. red onion, diced


1 tsp. fresh garlic, minced


Salt and pepper to taste





Preparation:





1. In a large bowl, mix canola oil, red wine vinegar, sun-dried tomatoes, fresh basil, red onions and garlic.


2. Using a wire whip, mix ingredients until incorporated.


3. Whip in salt and pepper to taste and warm slightly.





Chef's Tip:





When serving, place a heaping portion of rice on the center on a large dinner plate. Place fish leaning on half of the rice. Place asparagus next to fish and rice. Pick two pieces of asparagus and criss-cross over fish. Spoon two ounces of warm vinaigrette over fish. Serve with a lemon wedge.

SALMON WITH LOBSTER MASHED POTATOES





Ingredients:





4 eight-to-ten ounce pieces of fresh salmon fillets, skinless


陆 cup canola oil


McCormick's Season All


4 heaping portions of your favorite mashed potato recipe


Fresh vegetables of your choice (asparagus is a nice touch)


2 tbsp. chopped fresh parsley


2 tbsp. chopped green onions


4 lemon wedges





Lobster Sauce





1 live Maine lobster, 1 录 pound


1 quart heavy whipping cream


1 medium onion, diced


2 stalks celery, diced


2 carrots, peeled and diced


1 bay leaf


1 tsp. black peppercorns, whole


录 cup flour, all purpose


陆 cup butter, salted


2 tbsps. tomato paste


陆 cup cream sherry


1 tsp. fresh thyme leaves, stem removed


Salt and fresh-ground black pepper





Preparation:





Lobster Sauce





1. Prepare lobster by cutting in half lengthwise through the head and body first. Remove tail halves, and claw and knuckle sections. These are the sections with the meat for the sauce. Cut the body into two-inch pieces.


2. In a two-quart stock pot heat the butter over medium heat. Add all diced vegetables, lobster, peppercorns, bay leaf, and thyme. Cook on medium to medium-high heat, stirring continually for ten minutes or until the lobster shells start to turn red. Remove just the lobster pieces that contain meat and let cool for ten minutes.


3. Stir in flour and cook on medium heat, stirring continually for another 5 minutes.


4. Deglaze pan with sherry, then add cream.


5. Remove lobster meat from the shell, and set aside. Place leftover shells back into the lobster cream. Let reduce on low heat to desired consistency. (We suggest thick enough to coat the back of a spoon.)


6. Cut lobster meat into half-inch chunks.


7. Strain lobster sauce into a smaller pot and discard shell/vegetable mixture.


8. Stir in lobster meat and season sauce to taste with salt and pepper just before serving.





Grilled Salmon





1. Lightly brush both sides of fillets with olive oil and season with McCormick's Season All.


2. Pre-heat grill on medium-high heat and place salmon on, skin-side up. Grill for 4-5 minutes until well marked.


3. Turn fish over and continue grilling another 5-6 minutes or until your fresh fish preference is reached.





Chef's Tip:





When serving, put a heaping mound of mashed potatoes in the center of a large dinner plate. Pour about two ounces of lobster sauce over the potatoes. Place salmon on two-thirds of the potato. Place another two ounces of sauce over part of the fish. Finish plate with fresh green onions on the potatoes, fresh parsley on the fish, a lemon wedge and your favorite vegetable on the plate.

BROILED DILL SALMON





Ingredients:





陆 cup melted butter or olive oil


2 tsp. lemon juice


1 tsp. salt


1 tbsp. fresh dill chopped


1/8 tsp. red pepper


4 salmon steaks, cut 1 inch thick (about 2 pounds)





Preparation:





1. Place melted butter, lemon juice, salt, fresh chopped dill and red pepper in small bowl and stir to combine.


2. Preheat broiler.


3. Place salmon steaks on lightly greased pan and brush with half of seasoned butter.


4. Broil, 5 inches from source of heat, 5 to 10 minutes.


5. Turn heat to 400掳F, close oven and bake an additional 5 - 8 minutes.


6. Brush with remaining butter blend. Serve.

Try grilling it. Or one of my favorite ways is to make herb butter-just melt butter, throw in your favorite herbs and let it harden again. Then put salmon in a piece of foil, but pats of herb butter in the foil packet and then fold the edges to close it up. Put on the grill or the in the oven. It's just delicious! I like to put dill in my herb butter, but use whatever you want, get creative!

1st ~~ Clean the salmon tail...


2ND ~~ Cut half of thee lemon to a little piece


3rd ~~ Take the lemon juice from another half of it, to put it on the top of the salmon...


4th ~~ Some Salt, and White pepper...


5th ~~ Put it to the Oven to cook until you think is done...





^^ Don't cook it all the way... Otherwise the salmon will be to dry.... I normally cook about 15 mins

I like to do the followings:





#1. Flake into pieces and stuff in the bell peppers.





#2. Wrap in foils, top with orange slices or grapfruit meat or lemon slices and bake in 375 degree oven.





#3. Grill with fresh herbs especially rosemary to give as a good flavoring for the salmon.





#4. Steam with Ginger and green onion for natural tastes.
This was originally for the grill. You're supposed to wrap each one in its own foil pouch. On the bottom, shave zucchini and yellow squash. (I used a potato peeler.) Chop an onion, olives, and tomato and add that to the squash. Salt and pepper (I add garlic powder because we love garlic here.) and drizzle some olive oil. Salt and pepper the salmon, either steaks or fillets, and put it on top of the veggies. Drizzle some olive oil on the fish. And grill. Be careful when you open the package because of the steam. I did this in the winter without the pouches in the oven on 450, I think. It's yummy, easy, and you have all your vegetables done, too.

Healthy tastey salmon recipes?

I'm planning on having my dad bring home some salmon fillets from the freezer section. how would I got about preparing them to make a good dish.





I'm very new to cooking. like last time I tried to cook frozen salmon I did it in the microwave and burnt it (pity too because they tasted so good when the costco lady made them...) So I need some quick pointers.





I really want something flavorful that would go well with a pasta side. something healthy as I'm trying to get msyelf and my family eating better...something I can put yummy spices on (herbs mostly, I'm not really one for spicy.)








I suppose I could find a recipe online but my main concern is how to prepare a frozen fillet. do I defrost, them put the herbs on and cook or...what. I'm a bit unsure. My mom hasn't coked samlon before so she doesn't know either.

Yes you will need to defrost them, otherwise they will not cook evenly.


BAKED SALMON FILLETS OR STEAKS





Salmon fillets, any portion size, boned and skinned


Onion powder, to taste be generous


Garlic powder, to taste be generous


Dried dill, to taste be generous


Mrs. Dash, to taste be generous


Mayonnaise


Paprika





Wash and dry fillets. Spread thin coat of mayonnaise over salmon. Spray Pam or similar product over Pyrex or tin foil pan or rectangular pan (depending on amount and size of portions).


Sprinkle seasonings over fish ending with paprika. Bake in 375 degree oven for 10 to 20 minutes or until fish flakes easily.Healthy tastey salmon recipes?

Defrost them than make foil pouches for them soke them in some soy sauce lemon juice and honey for about an hour bake at 350 for an hour or until fish is flakey! It is delish!
Defrost them and then poach them. Salmon goes very nicely with hollandaise sauce...If you don't want to venture down that road to making the sauce, you can buy it from the store. Knorr makes the product. Its easy and when defrosted they poach quickly
Honestly I prefer to not over season my Salmon. It is very easy to overpower good Salmon's flavor with spices. I generally just prepare it with a little lemon juice and possibly a dash of garlic salt. Many people will use dill with their fish, but I find it is a bit strong for Salmon and is better suited for bland fish.





When I am baking Salmon I will also use a light drizzle of good oil just to help it not dry out during the baking process. The one key element is to not overcook your fish (as you have found out.)
You need to defrost it first then use any online recipe you like.

If you don't defrost, the salom will either get too watery, not cooked thru or just way to flaky.

    I have some salmon fillets (skinless) that I would like to prepare for dinner tonight, but the only way I have ever really prepared them is either lemon-pepper or garlic flavoured. I'm in the mood for something different!





    Some suggestions would be great! I have a well stocked fridge, freezer and pantry and there is a good store just across the lane!

    you will need ( to make about 4 fillets)


    1 tbs. olive oil


    1 C.Chicken Broth


    2 Tbs. balsamic vinegar


    1 Tbs. Dijon mustard


    2 tsp. packed brown sugar








    in a frying pan add


    1 tbs. olive oil


    and 1/2 cup of chicken broth- bring to a boil


    cook fillet for 5 mins skin side up in broth


    then flip and season other side with pepper


    cover and cook for 5-7 more mins

    Super Grilled Salmon


    This is a grilled salmon made with full bodied wine (Shiraz is best). It needs to marinate overnight for best flavor.


    * 1/4 cup brown sugar


    * 1/2 cup hot water


    * 1/2 cup Shiraz wine


    * 1/2 cup soy sauce


    * 1/3 cup olive oil


    * 3 cloves garlic, minced


    * 1/3 teaspoon lemon pepper


    * 2 pounds salmon fillets


    * 1 tablespoon cornstarch


    * 2 tablespoons cold water


    1. In a bowl, mix the brown sugar in the hot water until dissolved. Pour into a large resealable plastic bag, and mix in wine, soy sauce, olive oil, garlic, and lemon pepper. Place salmon in the bag, seal, and marinate 8 hours or overnight in the refrigerator.


    2. Preheat a grill for high heat.


    3. Lightly oil the grill grate. Reserving marinade, place salmon on the grill, and cook 5 to 8 minutes on each side, or until easily flaked with a fork.


    4. Transfer reserved marinade to a pot. Dissolve the cornstarch in cold water. Bring the marinade to a boil, and stir in cornstarch mixture to thicken. Serve over the salmon or on the side as a dipping sauce.
    Maple walnut salmon


    1 cup Maple syrup


    3 tbsp ginger (fresh or ground)


    3 tbsp Lemon Juice


    2 cloves garlic chopped or grated


    1/2 tbsp ground pepper


    1 cup walnuts sauteed in butter / margarine


    4 fillets needed but recipie can be adjested.


    Combine all ingredients accept walnuts together and let simmer for 10 minutes. Brush mixture on salmon while roasting (preheat oven to 350) or Bluing (over medium heat). Add walnut to maple syrup mixture, pour mixture over salmon serve warm. Cook until no longer pink in center.





    Roasted Lemon Salmon


    Place defrosted salmon on tin foil over cookie sheet or baking tray.


    Olive oil


    1-3 tbsp Lemon juice


    1-3 tbsp Lemon pepper seasoning


    1 tsp Ground rosemary


    1 tsp Parsley


    1 tsp Ground black pepper


    1 fillet of salmon but recipie can be adjusted to serve more.


    Place salmon over tin foil. Pour in olive oil and lemon juice. Sprinkle rest of ingredients over both sides of salmon. Fold tin foil lightly over but not completely covering salmon. Preheat oven to 350 and roast until no longer pink in center (usually about 15-20 minutes). Adjust ingredients to your taste and to the number of servings.
    Make a seasoning mix of pepper, kosher salt, garlic powder, chile powder, ancho chile powder and chipotle chile powder. Mix about 1/2 - 1 tsp each, depending on how many fillets you have. Mix well, sprinkle both sides of salmon with the mixture. Refrigerate for 1 hour. Cook over medium-high heat with olive oil. They will crisp up nicely. Drizzle with fresh squeezed lime juice. The chipotle chile powder provides a nice smoky flavor.
    Spread a little bit of honey on the top side of the salmon. Not much just enough to hold the spices. Sprinkle some Montreal Steak seasoning, lemon and pepper on the fillet. If you have a smoker then smoke it for about 2 hours at a really low temp (220 degrees). If you don't have a smoker then just bake it uncovered in the oven at about 250 degrees until flaky.

    Soak a cedar plank for at least an hour (overnight if possible). Mix a half cup of maple syrup and a quarter cup of soy sauce for a nice glaze. Add desired seasonings to taste. Put the fish on the plank,place it on a preheated grill (medium heat) for about 25 minutes.

    Get some Soy Sauce, garlic powder and brown sugar (light or dark) and mix together to form a marinade. Marinade for about 1-2 hours and grill or pan sear.

    very easy and tastes great, mix I small jar of hoisin sauce and 1/2 cup brown sugar, marinate 2 to 4 salmon steak for up to 1/2 hour. bake in 350 oven for 20 minutes basting twice and when removed with marinade. service with brown rice and steamed veggies.
    I prefer my salmon broiled.





    Sometimes I use a blackening spice. Coat both sides with the spice and then broil for 3-4 mins per side.





    My other fav way to do it is with lemonaise. It's awesome. Coat both sides and broil 3-4 mins per side. If you can't find lemonaise, make your own. (mayo, lemon, pepper, a little mustard)
    Something I do that is super easy is just marinate the salmon in Teriyaki sauce/marinade for 30 minutes and then grill, basting with the sauce.

    METHOD: Grill (gas or charcoal)





    TIME: Prep: 15 min. + standing Grill: 15 min.





    Ingredients:


    2 cups chopped seedless watermelon


    1-1/2 cups cubed fresh pineapple


    1/3 cup chopped sweet red pepper


    1/4 cup chopped green onions


    1/4 cup minced fresh cilantro


    1/4 cup orange juice


    1/4 cup lime juice


    1 teaspoon chopped jalapeno pepper


    1/2 teaspoon salt, divided


    1/4 teaspoon pepper, divided


    4 salmon fillets (6 ounces each)


    Directions:


    In a large bowl, combine the first eight ingredients; add 1/4 teaspoon salt and 1/8 teaspoon pepper. Let stand at room temperature for at least 30 minutes.


    Coat grill rack with cooking spray before starting the grill. Sprinkle salmon with remaining salt and pepper. Place on grill rack. Grill, covered, over medium heat for 6-9 minutes on each side or until fish flakes easily with a fork. Serve the salsa with a slotted spoon with salmon. Yield: 4 servings.

    Greek-Style Baked Salmon --








    INGREDIENTS


    8 (5 ounce) salmon fillets, with skin


    1/4 cup olive oil


    4 plum tomatoes, diced


    1/2 cup crumbled feta cheese


    1/4 red onion, diced


    1 tablespoon chopped fresh basil


    4 kalamata olives, sliced


    1 tablespoon lemon juice














    DIRECTIONS


    Preheat an oven to 350 degrees F (175 degrees C).


    Brush each salmon fillet on all sides with olive oil and arrange into the bottom of a glass baking dish with the skin side facing down. Scatter the tomatoes, feta cheese, onion, basil, and olives over the fillets; sprinkle with the lemon juice.

    INGREDIENTS


    1/3 cup soy sauce


    1/4 cup orange juice concentrate


    2 tablespoons vegetable oil


    2 tablespoons tomato sauce


    1 teaspoon lemon juice


    1/2 teaspoon prepared mustard


    1 tablespoon green onion, minced


    1 clove garlic, minced


    1/2 teaspoon minced fresh ginger root


    4 salmon steaks (1 inch thick)


    1 tablespoon olive oil














    DIRECTIONS


    In a shallow glass baking dish, combine soy sauce, orange juice concentrate, oil, tomato sauce, lemon juice, mustard, green onion, garlic, and ginger. Place salmon in marinade, and turn to coat. Cover, and refrigerate for 30 minutes to 1 hour.


    Preheat an outdoor grill for high heat.


    Remove salmon from marinade. Pour marinade into a small saucepan. Bring to a boil, and cook for 1 minute.


    Lightly oil the grill grate. Brush or spray salmon with olive oil. Cook on grill for 5 to 10 minutes, or until fish flakes easily with a fork. Turn salmon once, and brush with boiled marinade halfway through cooking time.

    Honey Coconut Salmon --











    INGREDIENTS


    1 1/2 cups butter


    3/4 cup honey


    1/4 cup brown sugar


    3/4 cup flaked coconut


    4 (4 ounce) fillets salmon














    DIRECTIONS


    Melt the butter in a saucepan over medium heat, and mix in the honey, brown, sugar, and coconut. Bring to a boil, and remove from heat. Cool slightly, and transfer to a large bowl. Place the salmon in the bowl, and turn to coat. Cover, and marinate at least 30 minutes in the refrigerator.


    Preheat oven to 375 degrees F (190 degrees C).


    Spread enough of the marinade mixture in a baking dish to coat the bottom. Arrange the salmon in the dish, and pour some of the marinade over the top, being sure to get some of the coconut on the top.


    Bake 25 minutes in the preheated oven, basting occasionally with the remaining marinade, until the salmon is flaked easily with a fork. Discard any leftover marinade, or bring to a boil, cook for 5 minutes, and spoon over salmon.

    1/2 cup orange marmalade


    2 teaspoons sesame oil

    3 tablespoons white rice vinegar (or other white vinegar)


    1 pound boneless, skinless salmon fillet, cut in four pieces
