This recipe came from Entertainment Tonight, way back when. They had a segment on ';Getting Ready for Oscar Night.'; They were showing some big fancy hotel where they were getting ready for the Oscar Night dinner that would be attended by all these famous Hollywood stars. And they were having salmon. The chef shared the recipe. It is by far the simplest, most elegant dish I have ever prepared, and it gets RAVES from everyone I've ever made it for. You can grill it, or prepare it in the oven under a broiler. Have passed this recipe along many times, and have actually been over to friend's homes for dinner, and they are serving....you guessed it...my recipe for...
OSCAR NIGHT SALMON
Coursley chop one cup of fresh mixed herbs, like basil, oregano, and tarragon....though you can really use any herbs you like.
Finely chop one to two garlic cloves (depending on your preference.)
Seed and dice 4 fresh medium Romano tomatoes
In a small glass bowl, add herbs, garlic, tomatoes, and 4 tbsp quality olive oil, enough to lightly coat the mixture. Gently stir together until evenly distributed.
Skin-side down, distribute the mixture onto the salmon fillet and evenly spread the mixture, covering the fillet with a thin layer of the mix. (The entire fish should be covered with about a 1/2 inch layer)
Lightly salt and pepper top of prepared fish.
Grill or broil, skin side down without flipping, until cooked through
You can play with this recipe to suit you, but it really is easy with some fabulous taste!! Looks very pretty, too!! I serve it with a brown and white rice mix, along with a pear and endive salad with a balsamic dressing. TOO GOOD!!
Good luck!!What is THE BEST broiled salmon recipe you've ever tried or had?

1/4 c. grated Parmesan cheese
1/2 tsp. Dijon mustard
4 salmon steaks, approx. 1 1/4-1 1/2 lb. fish
Dash cayenne pepper
Sauce: Put all ingredients except fish and cayenne pepper in blender. Blend until herbs are fine. Put 1/4 of sauce in bottom of baking dish. Mound rest of sauce over fish. Broil until done.
BROILED HONEY-LIME SALMON WITH
TARRAGON
2 tbsp. Dijon mustard
Juice of one freshly squeezed lime
2 tsp. olive oil
1 tbsp. honey
1 1/2 tsp. dried tarragon
2 tbsp. dry or semi-dry sherry
1/4 tsp. salt
1 1/4 to 1 1/3 lbs. salmon fillets, 1/2 to 5/8 inch thick
Nonstick vegetable spray
1. To make the marinade, thoroughly combine the first 7 ingredients.
2. Place the salmon fillets in a shallow, nonmetal dish and top with the marinade. Turn to coat the other side. Marinate in the refrigerator for about an hour, turning once or twice.
3. Preheat the broiler. Coat the broiler-pan rack with the nonstick spray.
4. Place the salmon on the rack, skin side down. Spoon the marinade over the fish.
5. Broil the fish 4 to 6 inches from the heating element for 5 to 6 minutes or until the fish is done. (No need to turn.)
Makes 4 servings. Salmon's special flavor is highlighted by Dijon mustard, lime juice, and tarragon. Honey adds a slightly sweet accent. Serve the fish with fresh lime wedges.
Fish alternatives: Mako shark, swordfish, bluefish, tuna, pompano, freshwater trout, mahimahi, sablefish, whitefish
LEMON BUTTER BROILED SALMON STEAKS
About 35 minutes before dinner:
1. Preheat broiler 10 minutes or as manufacturer directs. Into 1/4 cup mayonnaise or salad dressing stir 2 teaspoons prepared mustard. In small saucepan, over low heat, melt 2 tablespoons butter; blend in 1 tablespoon lemon juice, 1 teaspoon paprika, 1/8 teaspoon each of dried marjoram and pepper.
2. Lay two fresh salmon steaks, 3/4 inch thick, on foil lined broiler pan; brush with butter mixture. Broil, about 2 inches from heat, for 8 minutes or until golden, brushing once with butter sauce. Turn, brush with butter sauce, then broil 5 to 7 minutes or until salmon flakes easily, but is still moist. Serve, sprinkled with 2 tablespoons snipped parsley and garnished with 2 lemon twists; pass mustard sauce. Makes 2 servings.
For 4: Double ingredients; prepare as above; 1/4 cup commercial sour cream, seasoned to taste, may replace mayonnaise in mustard sauce. What is THE BEST broiled salmon recipe you've ever tried or had?
THE BEST SALMON:(Cooked in the oven) Is to use LEMON PEPPER, with the Salmon Coated in Olive Oil....%26amp; salt and garlic......pre heat the oven, around 300-350 depending on your oven. Place Salmon on a metal baking sheet and cook till tender and the skin is lightly crispy. You can cut up some vegies and place around the Salmon, and coat them in Olive Oil %26amp; seasonings as well.
ALSO:

Marinate salmon in your favorite italian dressing for a few hours. Take a sharp knife %26amp; make a few shallow slits in top of fish. Rub with minced garlic, sprikle w/salt %26amp; pepper %26amp; place on baking sheet sprayed with pam skin side down %26amp; broil til done - fish will turn pink %26amp; flake. I need a recipe for salmon?
I have a friend who is coming to dinner and i need an easy recipe for salmom. See she doesn't particularly care for the fishy taste in salmon but her doctor said it is good for her so i need a good recipe that helps cover the fishy taste. That's the only thing she doesn't like, the fishiness so we need some flavor that would cover up but keep enough flavor. Please a recipe would help so much!
Thank you.I need a recipe for salmon?
It's good and crispy and spices adds lots of flavor.
Pan-fried Salmon
Easy salmon fillets in less than 10 minutes.
step 1 Prep pan
Preheat a non-stick pan, spray it with canola oil, and add the spices of your choice. This layer of spice will adhere to the underside of your fish, avoiding the messy procedure of seasoning on the counter.
I used fresh ground black pepper and some cajun seasoning.
step 2 Prep and add fish
Rinse your salmon and pat it dry.
Holding the fish over the sink, lightly rub it down with a thin layer of cornstarch. Give your fish a gentle shake to remove any excess cornstarch; this is intended to be an extremely thin layer. The cornstarch will help seal moisture into your fish, and help form a slightly crispy exterior.
Drop it skin-side down in the pan and cook over medium-high heat.
step 3 Spray and season
Spray the top surface of the fish with the canola oil. This will ensure it has enough oil to prevent sticking when you flip it later, and will help spices stick to the surface.
Add the same spices that you originally added to the pan. I added black pepper and cajun seasoning, trying to get roughly the same ratio as I did in the pan.
step 4 Flip
Keep an eye on the thick end of the fillet to see how far through it's cooked. You want to flip the fish when it's slightly less than 1/3 of the way through the fish.
After flipping, watch until it has cooked slightly less than 1/3 of the way from the other side. The center will continue to cook after you remove the fish from the hot pan; if you wait until there's no pink left in the center the fish will overcook on the plate. Fish are delicate.
If you like, press the thick end up against the side of the pan to sear it before removing the fish.
step 5 Serve
Let the fish sit off the heat for 2-5 minutes to finish cooking and redistribute juices, then plate and serve quickly.
Serve with lemons and the side dishes of your choice.

Episode: Spice Capades
1/3 cup canola oil, plus 2 teaspoons for sheet pan
1 side of salmon (approximately 3 pounds), pin bones removed
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 tablespoon whole coriander, toasted
1 tablespoon whole fennel seed, toasted
1 teaspoon whole cumin seed, toasted
1 whole star anise pod
2 teaspoons onion powder
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Rub sheet pan with the 2 teaspoons of oil and place side of salmon in pan. Salt and pepper salmon. Set aside.
Add coriander, fennel seed, cumin seed, star anise, onion powder, garlic powder and cayenne pepper to a blender. Turn blender on high and process until whole spices become powder. With blender running, pour in 1/3 cup canola oil and blend until well combined. Stop blender to brush down sides of container, if necessary.
Brush salmon with spice mixture. Allow salmon to sit at room temperature for 30 minutes.
Preheat oven to the high broiler setting. Place salmon in the oven 6-inches from broiler. Cook until salmon reaches an internal temperature of 131 degrees F. This will take approximately 15 minutes, but will vary with different ovens. Remove from oven and let rest for 10 minutes, and then serve immediately. Note that the internal temperature of the fish will a rise a little as carry-over cooking occurs.
Buy fresh salmon, and ask to smell it.
If it smells fishy ask for fresher fish.
Fish should smell like the ocean.

okay here goes you take flanks of salmon and you mix it with coconut milk and curry powder to your taste and leave it overnight to marinate.
the next day you take macadamia nuts and crush it with butter and brown sugar to form a grainy paste.
You put the salmon in a baking dish skin side down (if it has skin) and then you spread the macadamia mixture over the top of each flank and you put the dish in the oven to cook for about 15 mins at 350 and you know it ready when you stick a knife in the middle of one of the flanks at it breaks apart in flakes you're all done.
Eat up and enjoy with a nice wild rice
Try using a teriyaki-style sauce like Yoshida's Gourmet Sauce which can be found at most grocery stores mixed with a little mayo. Just marinade it for 20 minutes and then either broil or barbecue your salmon on foil. It will completely eliminate the fishy taste and you'll be praised for your amazing dish.

The time will vary by microwave since they have different power wattage. But really I think you must cook salmon on high heat like broiling or pan fry very hot. Personally I like it better that way.
ummmm you want to know how to cook RAW FISH in a MICROWAVE? you might want to go ahead and add the question ';how long till I get sick?'; Sweetie, the exact amount of time is zero.

BAKED SALMON
INGREDIENTS
2 cloves garlic, minced
6 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
2 (6 ounce) fillets salmon
DIRECTIONS
In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
Preheat oven to 375 degrees F (190 degrees C).
Place fillets in aluminum foil, cover with marinade, and seal. Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.
I don't have a BAKED salmon recipe, but if you check my best answers I have several of my own recipes in there for various different type of pan fried and poached salmon recipes.
Dill Mustard Salmon:
1 (2- to 3-pound) salmon fillet, 1 1/2-inches thick
3 tablespoons extra-virgin olive oil
Coarse kosher salt
Freshly ground black pepper
1/2 cup mayonnaise
1/2 cup sour cream
3 tablespoons minced fresh parsley leaves
2 tablespoons Dijon-style mustard
2 tablespoons minced fresh dill weed
2 teaspoons freshly squeezed lemon juice
Salt and freshly ground pepper to taste
Preheat oven to 350 degrees. Line the bottom of an ungreased broiling pan with aluminum foil and spray broiler rack with vegetable-oil cooking spray. Wash salmon and pat dry. Rub with olive oil, sprinkle with coarse salt and pepper, and place skin-side down onto rack.
In a small bowl mix together mayonnaise, sour cream, parsley, Dijon mustard, dill weed, lemon juice, salt, and pepper; cover bowl with plastic wrap and refrigerate for at least 3 hours before serving.
Bake salmon, uncovered, 8 to 12 minutes or until a meat thermometer registers an internal temperature of 140 to 145 degrees F (salmon will be slightly opaque in thickest part). NOTE: During this time the salmon continues to cook (meat temperature will rise 5 to 10 degrees after it is removed from the oven) and the juices redistribute. Carefully remove salmon from pan and transfer onto individual serving plates. Serve with the cold mustard dill sauce.
Approximately cooking times for salmon:
1/4 to 1/3-inch - 3 to 4 minutes
1/2 to 3/4-inch - 4 to 6 minutes
1 to 1 1/2-inch - 8 to 12 minutes
Makes 4 to 6 servings.
It's delicious!
You are on the right track looking for a BAKED salmon recipe. I fished commercially for them for years and ate salmon three or four times a week. It has a great natural flavor and texture that does not need much help. I recommend that you bake it skin on, in large chunks. The skin will peel right off once the fish is cooked, leaving a nice moist outer surface. Be careful not to over cook any fish. The salmon should bake at 350-400 degrees just until the color of the meat changes. A little salt maybe a hint of lemon juice and you can't beat it in the finest restaurants. Serve with white rice. If there are left overs, try mixing a little curry powder with the meat for a unique taste.
SIMPLE
Bake salmon at 350 for 15 minutes. Serve over orzo pasta cooked in chicken broth, and a green side salad.
A fresh, wild salmon is flavorful on it's own, and will not need any seasoning or butter.
If you are using farm or wild caught salmon, season with dill and butter.
This a bit different, and very tasty ...
ROASTED SALMON %26amp; RHUBARB
If you prefer a thinner sauce, add a splash of white wine(water for us).
1 lb rhubarb, cut into 1/4 inch pieces (about 3 1/2 cups)
1/3 cup sugar
1/2 lemon, juice of, to taste
6 (6.00 ounces) salmon fillets, about 1 inch thick, pin bones removed
salt %26amp; freshly ground black pepper(omit; i wonder which ff spice would be good)
1. Preheat oven to 500 degrees, or its highest temperature.
2. In a smalll saucepan, combine rhubarb and sugar.
3. Cover and cook over low heat until rhubarb is falling apart, about 20 minutes, adding water if necessary.
4. Stir in the lemon juice.
5. The sauce should be the consistency of applesauce.
6. Arrange salmon filets, skin side down, on a foil or parchement-lined baking pan.
7. Season to taste with salt and pepper.
8. Bake until almost opaque throughout, about 17-20 minutes.
9. Spoon rhubarb onto center of warmed plates.
10. Lift fillets from pan, leaving skin behind if desired.
11. Place fillets on rhubarb.
1/4 cup maple syrup
1/8 cup whiskey
mix this up
seasoned salt, pepper, lemon and garlic sprinkled on the fish. Baste it in the liquid mixture above. Bake at 350 until flaky...20-30 minutes depending on thickness.
the best for me is just to season with salt and pepper then make a compound butter with, garlic, shallots, parsley, salt %26amp; pepper and smear the salmon filet then bake it in a pan that it can drip all the excess butter away until firm to the touch. great recipe to have with some roasted vegies or even a great salad.
** also I have marinated in teriyaki sauce, soy sauce, ginger, orange juice, garlic, green onions and oregano, then bake at 325* until tender it takes around 12/15* dont over cook it on salmon a medium to medium well is the best way to go.
pack the top with brown sugar and lemon and bake! I never liked salmon until i tried it this way now I eat it any way! My kids love it like this too!!!

how about sushi!!!???
okie baked.... hmm..
my thumb of rule when baking fish... ( no specific amount for me..)
lemon slices and/or lemon juice..
some garlic, ginger and red onions , you don't need a lot...
dill, parsley ( either one.. )
salt and pepper...
all together in the aluminium foil, some wine (wine is really optional)..
i don use butter, but instead olive oil.. just drizzle it a little
no overbaking, about 5-10 mins...
i'm lazy.. so normally i will wrap the thing up, leave in for a while. as though i'm marinating it.. then i dump the whole in the oven.
bake salmon

2 cucumber; peeled %26amp; cut into strips
Instructions
Combine salt, pepper and thyme then rub all sides of the salmon. Melt butter in baking dish then add salmon and coat with the butter. Add light cream, onion slices, parsley, garlic, and bay leaf then arrange cucumber strips around the fish. Bake covered for 40 minutes or until center bone can be removed easily. Remove and discard bay leaf, onion, parsley and garlic before serving.
Broil approx. 4 minutes per side. Time varies by heat of broiler or grill and thickness of fish, but it is done when it is flaky but still moist in the center.
Sauce:
1/4 cup melted butter
1 tsp. dijon mustard
1/2 tsp. dried dill weed or 1 1/2 tsp fresh dill weed
1/2 tsp. lemon juice
Mix all sauce ingredients together and serve with the salmon.
My kids love it like this too!!!

lemon slices and/or lemon juice..
some garlic, ginger and red onions , you don't need a lot...
dill, parsley ( either one.. )
salt and pepper...
all together in the aluminium foil, some wine (wine is really optional)..
i don use butter, but instead olive oil.. just drizzle it a little
no overbaking, about 5-10 mins...
i'm lazy.. so normally i will wrap the thing up, leave in for a while. as though i'm marinating it.. then i dump the whole in the oven.

30 g finely chopped celery
25 g sliced green onion
4 g chopped fresh dill weed
1 g garlic powder
40 g wheat germ
45 ml olive oil

:)Do you have a good recipe for salmon croquettes?
INGREDIENTS
* 1 (14ounce)can salmon
* 1/4 cup salmon liquid, from the salmon
* 1 egg , slightly beaten
* 1/2 cup flour
* 1 teaspoon baking powder
* oil (for frying)
1.
Half fill a deep fryer or skillet with oil. Preheat while you are mixing the salmonettes. Drain all but 1/4 cup liquid off the canned salmon and set it aside. Put the salmon in a mixing bowl and break it apart with a fork until you have no big flakes. Add the flour and egg. Blend with a spoon until all of the flour is mixed in, don't overmix.
2.
Add the baking powder to the liquid that was set aside and beat with a fork or whisk until frothy. Immediately pour this into the salmon mixture and stir until well blended. It is important not to let the baking powder and liquid mixture sit after mixing. Pour it immediately.
3
Drop the mixture by spoonfuls (small bite sized balls are the best) into the hot oil. They will brown very quickly-about 5-7 minutes. Lift them out with a slotted spoon and drain on a paper towel.

Is it OK to substitute rum for burbon in salmon a recipe?
This recipe:
6 fillets Salmon
1/4 cup Bourbon
4 tablespoons Butter
1/2 cup brown sugar
Directions:
Melt butter and brown sugar over medium heat, in a pan large enough to cook the salmon. Add salmon filets, cook 6 minutes. Flip Salmon, Add bourbon, and finish cooking fish, approximately 6 more minutes or until opaque and flakes with a fork. Serve salmon with glaze on top-Is it OK to substitute rum for burbon in salmon a recipe?
its fine of course you will change the recipe some but thats what is so nice about cooking you have the pleasure of changing things to your own taste i do it a lot with aclohol you will have your own variation to a recipe.......i do it a lot of time with similar spices.and meats and seafood ..and even it may call for shrimp and i have sub scallops ...the recipe looks good a lot of people dont realize that sugar can be used on fish......Is it OK to substitute rum for burbon in salmon a recipe?
ABSOLUTELY!!! Rum is made from cane, so when you cook it down, the flavors get concentrated %26amp; really sweet. Suggestion: add some chopped green onion on top for a little kick %26amp; presentation.
Oh yes by all means! My hubby is a retired salmon fisherman, and he has always used rum rather than other alcohols.
With the butter and brown sugar you may be surprised at how wonderful it works!
Bon Apetite!
Enjoy!!!
It's gonna taste different because rum and bourbon taste different. I hope you like the flavor of bourbon.
You can definitely substitute rum for bourbon in this recipe. It might actually taste better if you like rum better than bourbon.
Yes, but make sure the rum is brown and add a 1/2 teaspoon of brown sugar.
Bourbon, when reduced, gives a beautiful brown, sweet glaze.
Oh, your recipe calls for brown sugar, disregard the 1/2 teaspoon!
Sure. Go for it.
They probably use nothing but Bourbon in Kentucky.
In the Caribbean they probably use nothing but Rum.
It's what makes you smile that counts/
If it was a brown rum it would be ok I think
i would say no

Anyone have an easy recipe for salmon?
I have four nice size salmon filets in my freezer and I haven't touched them. I just don't know how I should cook them. Any ideas? And something not to complexed, I usually don't have a lot of time to cook.Anyone have an easy recipe for salmon?
Salmon Recipe
Ingredients:
Heat 2 Tbsp butter until melted and then take off heat and add,
1 tsp worchestershire sauce
1 tsp lemon juice
2 tsp of dill
Directions:
Brush a salmon filet or 2 salmon steaks with the sauce and then place on a broiler pan that has been coated with oil.
Boil for about 10 minutes at 450 degrees being careful not to overcook the salmon.
Good Luck!Anyone have an easy recipe for salmon?
Grill them and brush them with orange juice, honey and garlic mixed together..it's really good.
defrost them, put each fillet on its own peice of foil (larg enough to fold over and seal) add fresh lemon, lemon pepper and any other seasonings desired, close foil into pouch, throw it on the BBQ or in the oven (which ever you prefer) and its done in about 10 mins.
Simple Salmon: 5 minutes cooking time.
Defrost the salmon in cold running water. Pre-heat broiler to 'Broil'
Salt and Pepper the NON-skin side of the salmon. Heat skillet over high heat with 2 tablespoons of oil (olive if you got it) and 1 tablespoon of butter. When the oil is hot but not burning put the salmon SKIN SIDE UP into the pan and let it cook for about three minutes. If your skillet is oven-safe then put it under the broiler with the salmon still skin side up for 2 minutes. Then its done. Take it out of the broiler, flip it over onto a plate, squirt some lemon or whatever and eat it.
Easy and inexpensive
One can of salmon, drained
add one egg (small onion chopped, optional)
1/2 tsp garlic salt
tbsp worchestersire sauce
2 tbsp flour
mix well
divide into six parts
roll into a ball and through any seasoned bread crumbs
bake at 400 degrees until the coating is browed (about twenty minutes)
serve on plate center surrounded with your veggie choice and
a potatoe au gratin
its a healthier take on the crab cake
Get two sheets of foil one on top of the other. Place fillet (thawed) in middle. Cut up a lemon an place slices on top of fillet. Sprinkle with salt and pepper. You can add some dill seasoning too if you like. Tuck up the foil into a packet so the fold is in the middle. The put on a BBQ for about fifteen mintues on medium heat. Check the fillet until it flakes easily with a fork.
Ways of serving
1. Steam and serving with lemon juice
2. Wrap in foil and top with orange or lemon slices and bake at a 400 degree for 20 minutes or until done.
3. Grill with soy sauce marinade.
4. Grill and serve with Teriyaki Sauce.
5. Bake with your favorite herb and spices.
6. Pan-fry with Garlic
7. Pan-fry with teriyaki sauce
8. Grill and Serve with sliced grilled fresh fruit or grilled vegetables.
dip in butter[ melted and wrap in foil and grill till done
with a quartered potatoe sweet potatoe or yams are good with them
Put them in a bowl, add a little water, soy sauce, ginger (can use powdered for ease) and crushed garlic (also honey if you like a sweeter taste).
Cover and vent, microwave for 4 mins. I do this a lot - steam some green veg or make a salad to go with it - super quick, healthy and delicious :)
I love to bake salmon....put it in a heat resistant pan ad a little bit of olive oil, stuff it with 1-2 cloves of garlic, add the juice from 1/2-1 lemon add salt/pepper and whatever other spices you like and bake it at 350-400 for 15-25 minutes ....it's delicious and healthy. Works fantastic with french fries, mashed potatoes, spinnach...or any other veggies you have:)
Best of luck to you.
I like salmon best on the grill. Use foil. Butter. Serve with lemon wedges. Don't overcook. Also love it baked with butter and Worcestershire sauce or butter and soy sauce. Dill goes great with salmon; just don't overdo it. I also love it raw as sushi dipped in soy sauce mixed with wasabi (you have to buy sushi grade salmon for this)
Put them on a broiler pan that you have greased with cooking spray. Set the oven rack so that the salmon is 4-6 inches from the top heating element. Skin side down, sprinkle with salt and pepper - broil high for about 15 min (give or take depending on the thickness - check by putting a knife in the thickest part - if it slides in easily with no give, it's done). Make a quick sauce of equal parts mayo and sour cream, some fresh or dried dill, salt, pepper and lemon juice (let it hang out in the fridge for a couple of hours before serving). Yummy!
